1 Introduction to the Hospitality Industry Business 11 Syllabus Section 1269 Instructor: Dan Margolis Office: B150 Course Description This course provides students with an introduction to the hospitality industry, explaining the interrelationships and history of key leisure industry segments. An emphasis is placed on the application of technology, sustainability, ethics, leadership, teams, critical thinking, and service standards for the restaurant, hotel, and travel- related businesses. The course examines career opportunities, operations management, human resource management, marketing, and financial considerations for each segment. Course Objectives Upon completion of this course the student will be able to: Describe the scope of the hospitality industry and identify the key industry segments. Identify the career opportunities within the hospitality industry and the educational and training requirements to enter and be successful in this industry. Trace the origins, growth, size and scope of the hospitality industry. Distinguish among the various types of operations within the hospitality industry and describe the globalization of this industry. Identify the overall organizational structure and management of the lodging, food service and tourism systems within the hospitality industry. Explain current trends within the industry, both domestic and foreign, and forecast several factors that are likely to affect the future of the hospitality industry. Summarize the basic principles and concepts of sustainability and green practices in the hospitality and tourism industries. Learning Outcomes 1. Explore job opportunities in the hospitality industry and develop a career portfolio. 2. Identify key issues and trends, such as threats or opportunities for sustainable operations, economic conditions, etc. in a leisure industry segment. 1

An explanation will be given in class on how to complete the online material provided by the Hospitality & Tourism Interactive study tool. Exams May consist of objective questions, short answers, and essays. Each exam is worth 250 points. All three exams count towards your final grade. Course Materials Exploring The Hospitality Industry (W/Hospitality Interactive Access Code) Walker, Prentice Hall ISBN $95 at SMC Bookstore PIN Codes are required to access copyrighted material. PIN Codes are bundled with new textbooks purchased from SMC Bookstore and A & R Books. Course Policies Other than this syllabus, all other course materials will be available only via the Internet at and Regarding the online portion of this course, dates and deadlines are on PACIFIC TIME. Correspond via rather than phone messages. Please remember I only teach one class SMC requires that students use their SMC Google- powered account (username@student.smc.edu) for all communication. I am unable to respond to any other accounts. All correspondence via must include BUS 11 in the subject line and your full name in the body of the . Any correspondence, or other, will not get a response. Keep an electronic paper trail of all correspondence. Save all sent . I will do the same. 2

3 General questions should not be ed. They should be posted on the Threaded Discussion located in the "Course Home" section. I will post a reply so all students can receive the information. Most questions are shared by other classmates. Everyone will be able to access the information. If your question is personal in nature, please use . When in doubt, use . It is your responsibility to drop the course. Late drops or additions are NOT allowed. No Exceptions!!! Confirm the drop deadlines to avoid a W or receive a guaranteed W with the admissions office. Unexcused missed exams will result with a fail (zero points) for that exam. There are no make- up exams. It is your responsibility to bring writing instruments and erasers that work during the exams. No bartering allowed. Any eraser errors on the Scantron exams will not be acknowledged!!! You must be prepared to show a picture I.D., such as a California Drivers License or an SMC Picture I.D., when taking an exam. There will be no plus or minus grades given on straight letter grades No hats of any type or sunglasses can be worn during an exam, unless specified in writing for medical reasons. Pagers and Cellular phones must be set on vibrate or must be turned off. No laptop computers may be used in class unless approved by the instructor Because I regard this class as I would any job responsibility, I will hold you to strict standards of timeliness and ethics. In this regard, late work is unacceptable. Any assignment that is not submitted by the due date will receive zero points. With regard to ethical conduct, it is my sincere hope that no student in this class submits work which is not his or her own. Any assignment that is not written solely by the student whose name appears on the submission, will automatically receive a grade of zero (0) for the assignment. Similarly, if a student is determined to have cheated on an exam, the student will receive a score of "0" for the exam. Any requests for accommodation during the semester for such things as religious holidays or disability must be presented to the instructor in writing (via ) no later than Friday, April 27 th.
