4 Utensils (continued) Do not use dishes, pans or other containers that are made of metal or have metal handles or trim. Metal pans reflect microwave energy and do not allow it to pass through and heat the food. Also, avoid using paper-covered wire twist ties, some types of dinnerware, such as Centura or Melamine, conventional meat and candy thermometers, and foillined packages. Foil trays under ¾ inch deep can be used, although heating will occur only on the exposed top surface. Keep foil at least 1 inch from oven walls. Utensil Size and Shape Round shapes allow food to microwave evenly because the energy penetrates equally from all directions. Square and rectangular pans allow microwaves to penetrate corners from both sides, often resulting in over-cooking. Corners may require shielding to prevent this. Depth has considerable impact on cooking time. A shallow casserole with a 2-qt. Capacity will take less time to microwave than a deeper casserole with the same capacity. More food surface is exposed in the shallow container and cooking time is shortened. Ring shapes work well for foods which cannot be stirred during cooking. This shape allows energy to penetrate from the center as well as from the sides, top to bottom. Cooking is faster and more even. Straight-sided dishes keep the depth of food uniform so food cooks more evenly. Avoid using containers with sloping sides, in which shallower areas can overcook. Appendix Information Source 3 A 3 4

8 Scalloped Potatoes TOTAL COOKING TIME: 24 minutes Serves 4 3 Tablespoons butter or margarine 1/2 cup chopped onion 3 tablespoons all-purpose flour 1/2 teaspoon salt 1/8 teaspoon pepper 1½ cups milk 4 medium potatoes, peeled In 2-qt. Casserole combine butter and onion. Microwave at HIGH for 1 to 2 minutes, or until butter melts. Stir in flour, salt and pepper. Blend in milk. Microwave at HIGH for 5 to 7 minutes, or until thickened, stirring after first 2 minutes, and then after every minute. Cut potatoes in half lengthwise, then crosswise into ¼-in. slices. Add to thickened sauce. Cover. Microwave at HIGH for 10 to 15 minutes, or until potatoes are fork tender, stirring every 5 minutes. Let stand, covered, for 5 minutes. Au Gratin Potatoes Follow the recipe above, adding 1 cup shredded Cheddar cheese to thickened white sauce. German Potato Salad TOTAL COOKING TIME: 15½ minutes Serves 4 4 medium red potatoes, peeled 1/4 cup water 3 slices bacon, cut up 1/2 cup chopped onion 1/3 cup chopped celery 1 tablespoon all-purpose flour 1 tablespoon sugar 1/4 teaspoon salt 1/8 teaspoon pepper 1/4 cup vinegar 1/4 cup water Cut potatoes in half lengthwise, then crosswise into ¼-in. slices. In 2-qt. Casserole combine potatoes and ¼ cup water. Cover. Microwave at HIGH for 7 to 9 minutes, or until potatoes are fork tender, stirring after half the time. Drain, Cover and set aside. In small bowl or 1-qt. Casserole combine bacon, onion and celery. Microwave at HIGH for 1½ to 2½ minutes, or until onion is tender, stirring after half the time. Mix in remaining ingredients. Microwave at HIGH for 1½ to 2 minutes, or until thickened, stirring after half the time. Add to potatoes, tossing to coat. Cover. Microwave at HIGH for 2 minutes Appendix Information Source 3 A 3 7
9 Carrot Cake Code: D-1 Medium TOTAL COOKING TIME: 20½ minutes Makes 2-layer cake 1½ cups all-purpose flour 1½ cups granulated sugar 2 teaspoons ground cinnamon 1 teaspoon baking powder 3/4 teaspoon salt 1/2 teaspoon baking soda 1 cup vegetable oil 3 eggs 2 cups grated carrots 1 can (8 oz.) crushed pineapple, drained FROSTING: 1/4 cup butter or margarine 1 pkg. (3 oz.) cream cheese 2 cups powdered sugar, divided 1 teaspoon vanilla Line bottoms of two 9-in. cake dishes with wax paper. In large bowl combine flour, sugar, cinnamon, baking powder, salt and baking soda. Mix in oil and eggs. Stir in carrots and drained pineapple. Divide batter between prepared dishes. Microwave one dish at a time at power level 7 for 5 minutes, turning dish after half the time. Increase power to HIGH. Microwave for 3 to 5 minutes, or until center springs back when touched lightly, turning 2 times. Let stand on counter for 5 minutes. Invert onto serving plate. Repeat with remaining layer; cool. Place butter and cream cheese in small bowl. Microwave at HIGH for 30 seconds to soften. Blend. Stir in 1 cup powdered sugar and the vanilla until smooth. Mix in remaining powdered sugar. Spread between layers and on top of cake. Apple Cake Code: D-1 Medium TOTAL COOKING TIME: 28¼ minutes Makes 3-layer cake 2 cups all-purpose flour 1½ cups granulated sugar 1/2 cup packed brown sugar 2 teaspoons baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 3 eggs, beaten 1/2 cup vegetable oil 1 teaspoon vanilla 6 cups chopped, peeled apple (5 to 6 medium) 1 cup chopped walnuts MAPLE FROSTING: 1/4 cup butter or margarine 1/2 cup dairy sour cream 1/2 teaspoon maple flavoring 4 cups powdered sugar Line bottoms of three 9-in. cake dishes with wax paper. In large bowl combine flour, granulated sugar, brown sugar, baking soda, salt and cinnamon. Blend in eggs, oil and vanilla. Stir in apples and walnuts. Divide batter evenly among prepared dishes. Microwave one layer at a time at power level 7 for 5 minutes. Turn dish. Microwave at HIGH for 3 to 4 minutes, or until center springs back when touched lightly, turning dish once. Let stand on counter for 5 minutes. Invert onto serving plate. Repeat with remaining layers. Cool. Place butter in medium bowl. Microwave at HIGH for 1¼ to 1½ minutes, or until butter melts. Blend in sour cream and maple flavoring. Add powdered sugar, 1 cup at a time, mixing until smooth.
