3 LATTE using Milk Autofrother Take the Milk jug CHECK: Milk jug is clean LATTE using Milk Autofrother 7 Place the milk jug next to the Autofrother Fill with milk to at least just above the bottom of autofrother and no more than / (This will make - drinks) Mik Jug Pour Milk Into Jug Latte Cup Press the autofrother button on and off to purge the steam wand Place the jug with milk under the autofrother Press the button until the display reads steam and release to start the autofrother Purge Steam Wand Jug Under Autofrother 8 Place the cup under the handle Press the single button if single handle or double coffee button if double handle. 5 Magrini LIFE Espresso Machine HOT CHOCOLATE using Milk Autofrother Take the Milk jug CHECK: Milk jug is clean Place the milk jug next to the Autofrother Fill with milk to at least just above bottom of autofrother and no more than / (This will make - drinks) Mik Jug Pour Milk Into Jug Press the autofrother button on and off to purge the steam wand Place the jug with milk under the autofrother Press the button until the display reads steam and release to start the autofrother Purge Steam Wand Jug Under Autofrother Hot Chocolate Cup TEA Select teapot CHECK: Pot is clean and dry Place teabag in pot Place teapot under hot water outlet and press hot water button twice to fill teapot - levels may vary Teapot Place Teabag in Pot Press Hot Water Button twice to Fill Teapot Put teaspoons of hot chocolate powder into the cup Remove teapot and replace lid Powder & Cup Replace Lid Place the cup under the hot water outlet Press the hot water button on and off to dispense enough water to make a paste Mix the powder and water together Fill milk jug with cold milk and serve with teapot and cup Dispense Hot Water Mix to Make Paste Place the cup on a saucer Pour the milk into the centre of the drink and stir with a teaspoon Stir to Mix Serve Milk Jug, Teapot & Cup Finished Hot Chocolate Drink

6 LATTE using Manual Milk Arm Take the Milk jug CHECK: Milk jug is clean Fill with milk to no more than / full - (This will make - drinks) Attach the thermometer to the milk jug Make sure the manual steam arm tip is pointed towards the drip tray Push steam arm button on and off again to purge the steam arm Using the black rubber grip position steam arm as shown Mik Jug Point Tip to Drip Tray & Purge Steam Arm Jug & Thermometer Steam Arm Position LATTE using Manual Milk Arm 8 9 Check the handle is clean Select the correct coffee pod single (7g) for single handle or double (g) for double handle Ensure the pod selected is in a sealed pack Open the pack carefully making sure the pod is not torn Place the correct pod into the correct handle - REMEMBER: SINGLE HANDLE, SINGLE POD - DOUBLE HANDLE, DOUBLE POD Before placing the handle into the machine press the single coffee button on and off to purge the group. Place the handle into the machine Single Coffee Pod Double Coffee Pod Put the jug under the steam arm so the tip of the steam arm is just below the surface of the milk Push the steam arm button to turn the steam arm on fully 0 Place Handle in Machine Keep the jug in the same position until the milk temperature reaches 0 Push the steam arm button to turn the steam arm off Remove the jug from the steam arm Tip of Steam Arm Just Below Surface of Milk Keep Jug in Same Position Push Button to Turn Steam Arm On Push Button to Turn Steam Arm Off Place the cup under the handle Press the single button if single handle or double coffee button if double handle. When the machine stops pouring place the cup on a saucer Latte Cup Wipe the steam arm with the probe wipes & push the steam arm button to to purge the arm Ensure the tip of the steam arm is pointed towards the drip tray Remove correct handle from machine - single handle for one drink or double handle for two drinks Wipe Steam Arrm Steam Arm Over Tray Remove the thermometer from the jug Bang the jug times on a flat surface keeping the base of the jug on the surface swirl the milk until it shines Place the coffee cup on a saucer Pour the milk into the centre of the espresso, shake the jug slightly as drink is finished Knock Jug on Bar Top then Swirl Pour Milk Into Centre of Espresso 7 Remove old coffee pod by knocking handle against plastic bar in knockout box Single Handle Double Handle Remember the rule of : Single handle, single pod, single button Double handle, double pod, double button Knockout Bar Finished Latte Drink

8 HOT CHOCOLATE using Manual Milk Arm Take the Milk jug CHECK: Milk jug is clean Fill with milk to no more than / full - (This will make - drinks) Attach the thermometer to the milk jug Mik Jug Jug & Thermometer HOT CHOCOLATE using Manual Milk Arm 7 Latte Cup Make sure the manual steam arm tip is pointed towards the drip tray Push steam arm button on and off again to purge the steam arm Using the black rubber grip position steam arm as shown Point Tip to Drip Tray & Purge Steam Arm 8 Put teaspoons of hot chocolate powder into cup Mix to Make Paste Using the black rubber grip position steam arm as shown 9 Place cup under hot water outlet Press hot water button on and off to dispense enough water to make a paste Dispense Hot Water Steam Arm Position Put the jug under the steam arm so the tip of the steam arm is just below the surface of the milk Push the steam arm button to turn the steam arm on fully Mix powder and water together 0 Mix to Make Paste Keep the jug in the same position until the milk temperature reaches 0 Push the steam arm button to turn the steam arm off Remove the jug from the steam arm Tip of Steam Arm Just Below Surface of Milk Push Button to Turn Steam Arm On Place cup on saucer Pour milk into centre of drink and stir with teaspoon Stir to Mix Keep Jug in Same Position Push Button to Turn Steam ArmOff Wipe the steam arm with the probe wipes & push the steam arm button to to purge the arm Ensure the tip of the steam arm is pointed towards the drip tray Wipe Steam Arrm Steam Arm Over Tray Finished Hot Chocolate Drink

9 Magrini LIFE Espresso Machine Magrini LIFE Espresso Machine TRAINING SKILLS Some Pointers TRAINING SKILLS Structuring a Training Session Bite sized sessions Stick to short training session s in small groups allowing for more practice. Use steps Break your training session down into steps allowing your trainee time to catch up before moving on to the next logical step. For example when training a cappuccino, Make the coffee base of the cappuccino (demonstrate this) Ask your trainee to catch up to where you are (involve them) Ask a question to check their understanding to this point (explain) Move on to the next step of making and pouring the milk...for example Preparation Aim Intro Middle Wrap up Know what you are going to say and what your objectives are. What do you want to achieve from this session? Introduce coffee, giving relevant and useful information (e.g. Brand plan, empathica comments, level of existing knowledge, information about the machine, ingredients (coffee pods, milk). Making the drinks. Use steps, ask questions and get everyone involved. Train one coffee drink at a time starting with the simplest first. Your trainees will feel more confident making coffees if they have had plenty of practice and the opportunity to ask and answer questions about the product. What are the main points to remember? Think about who might buy coffee, think about ways to drive consistency and serve the perfect coffee each time. Make the milk (demonstrate this) Ask your trainee to catch up to where you are (involve them) Ask a question to check their understanding (explain) In this way your trainee is able to take in smaller chunks of information and make fewer mistakes. Practice- tricky bits Milk- Frothing the milk tends to look trickier than it is (especially with the manual frother). When you are training this in for the first time make sure you take your time in demonstrating making and pouring the milk. Allow all your trainees to practice this. Use questioning Your trainees should be doing most of the work. Use questions to get them to contribute and to test their listening and understanding. For example, How full does the milk jug need to be before frothing the milk What is the difference between a cappuccino and a latte Write out key questions that you would like your trainees to answer & include them in your notes. Get your learners involved Similar to the point about questioning; if you are doing most of the work your training is not as effective as it could be. Your trainees are not actively learning but passively listening to you. Play People learn more when enjoying themselves! Use your notes The sign of a good trainer is not necessarily someone that can train without notes. Using and referring to your own notes (especially if the training is new to you) ensures that you don t forget any points and that your sessions are planned. Create a training programme Generally speaking, if you have a plan, you are more likely to see some progress than randomly running training sessions. Measuring Success Think about how you will measure the effectiveness of the training. Will you test your trainees? Will you look at coffee sales or gather customer feedback? BEST PRACTICE Never wash coffee cups in the glass washer Never leave the steam arms soaking in any liquid Do not leave milk to dry on the steam arm Wipe steam wand and clean sleeve after every use Purge steam wand before and after foaming milk Ensure cups are always warm, if not, warm quickly using hot water Do not empty coffee pod into the bin until the next coffee is needed If milk is not foaming correctly, check the following: Level of milk in foaming jug is 0cm above the tip of the steam arm The three holes as indicated in the cleaning instructions are clean The milk being used is cold and has not already been foamed Coffee Pods Coffee Pods contain ground coffee only Coffee Pods should be in date and in a sealed bag Do not store coffee pods on the cup warmer Milk Milk should be used chilled from the fridge Only use fresh milk that is in date Point Check List Purge both steam wands - you should see water/steam. If milk residue is present then site are not purging steam wand Appearance of steam wand - should not see milk residue Use consumables checklist to ensure all parts are at machine Have a drink - use best serve guide Take filter basket out of handle - you should see metal not black

10 DAILY CLEANING INSTRUCTIONS Espresso Machine Cleaning Powder Espresso Machine Cleaning Brush Probe wipes Blanking Disk Remove old pod from machine Place blanking disk in handle. Cleaning Powder, Brush, Probe Wipes & Blanking Disk Unscrew right hand steam arm CAUTION: STEAM ARM MAY BE HOT Rinse sleeve under hot water outlet and pour hot water ensuring it flows inside and outside the sleeve. CAUTION: WATER IS VERY HOT Wipe stainless steel arm with probe wipes CAUTION: STEAM ARM MAY BE HOT DAILY CLEANING INSTRUCTIONS - BARISTA STEAM WAND Unscrew Steam Arm Pour Hot Water Over Sleeve Place Blanking Disk in Handle Wipe Stainless Steel Arm Place / teaspoon of espresso cleaning powder into blank filter and insert group handle. Clean parts thoroughly Place Cleaning Powder into Blank Filter Insert Group Handle Clean Parts Thoroughly Press continuous button and after 0 seconds press again to turn off. Repeat three times. Remove handle and flush under hot water. Insert handle containing blanking disk and flush again times. Press Continuous Button Flush Handle Under Hot Water Return to the machine and carefully clean the temperature probe using hot water, ensuring all milk residue is removed. Clean Temperature Probe Remove handle and, using espresso head cleaning brush, clean shower plate. CAUTION: AREA MAY BE HOT Clean drip tray Clean Shower Plate Using Cleaning Brush Clean Drip Tray Remove filter baskets from handles Clean inside, under hot water, with the cleaning brush. CAUTION: AREA MAY BE HOT Press ECO button Next day when the ECO button is pressed the machine will take 0 minutes to reach correct temperature Remove Filter Baskets Clean Under Hot Water Press Eco Button

11 DAILY RE-ASSEMBLY INSTRUCTIONS - BARISTA STEAM WAND Slide steam arm over temperature probe & screw on securely TROUBLESHOOTING GUIDE If the digital display shows: TOO LOW TEMP Turn machine on and off and allow another 0 minutes to see if machine heats to required temperature TOO LOW TEMP Slide accelerator tube over steam arm & screw on securely If the digital display shows: TIMEOUT ALARM - BOILER FILLING UP Check all water taps are open TIMEOUT ALARM - BOILER FILLING UP When reassembled press far right hand button to purge steam arm If the digital display shows: ECO Lift drip tray and press button on right hand side ECO Purge Steam Arm If machine is leaking: Lift drip tray, check water is in black drain bowl. If drain bowl is full check waste is draining away correctly underneath machine If none of the above happens but the coffee machine does not work, call your approved coffee maintenance contractor
