3 WHY DRY PEAS HEALTH BENEFITS AND FUNCTIONALITY Dry peas has been an important part of the human diet since prehistoric times. Today there is a growing understanding of the health benefits from including dry peas in human diets. Dry peas are a small but nutritionally mighty member of the legume family. Peas are a good source of cholesterol lowering fiber and it is a good food item, especially for people with blood sugar disorders, because sugar levels are kept more constant after a meal with peas than with many other food items. Peas also provide an excellent source of protein, amino acids and minerals. Furthermore, they contain phytonutrients that might lead to a reduced risk of certain cancer diseases, according to some scientists. Health issues are becoming more and more important to consumers. That is one reason for including dry peas in recipes where it is possible. Another reason is that, as a food manufacturer, you can benefit from the functionality of various pea based products available from DLG Ingredients. On the following pages we present our range of products available to food manufacturers. 4 PEATEX Our PeaTex products are based on dry yellow peas (Pisum sativum), prepared by the use of extrusion cooking technology. As a result the products have excellent water binding capacities. It is a healthy and cost effective alternative ingredient for manufacturers of meat and poultry products such as minced meat and sausages. In addtion to water binding the PeaTex also stabilizes fat. PeaTex is available as various powders and flakes texturized. Furthermore the flakes are available also in brown color. These products will add positively to the texture, appearance and taste in for example burgers. 6 IMPLEMENTING PEATEX Replacing Soya with PeaTex Replacing soya by applying PeaTex to your recipe requires a simple procedure similar to the process when using soya. However, the main difference is that a pre-emulsion is not necessary when using Pea- Tex in your recipe. Replacing MDM with PeaTex If you normally use 20 kg of MDM in your recipe, you can replace it by adding 5 kg PeaTex and 15 kg water (a ration of 1:3). Instead of using MDM, a gel consisting of water and PeaTex is added directly to your recipe. 7 PeaTex is a perfect ingredient for sausages and other minced meat products. It contains both protein and starch and therefore has excellent water and fat binding capacities. 7

8 PEA STARCH AND PEA PROTEIN Dry peas can be divided into two parts: One part which is mainly starch and another part which is mainly protein. DLG Ingredients has its own production facilities for the manufacturing of these products. We offer the Pea starch as a native starch with a swelling temperature of approx 70 (check) and a gelatinized (cold swelling) starch. The gelatinized starch can be used in minced meat products and sausages as a healthy and costeffective substitute for other starch. The native starch is mainly for feed and for industrial uses. Pea protein is also offered as a native protein and as an extruded protein. The native protein is mainly used for pet food whereas the extruded protein is used in the meat industry as an alternative to other protein sources. 8

10 FIBRADAN Fibradan is a fiber product produced from the shell of dry yellow and green peas with no use of additives. To ensure bacteriological standards required by the food industry the shells are heattreated as an integrated part of the production process. Fibradan can be used in bread, bisquits and crackers and in breakfast cereals. Furthermore it can be used as a healthy functional ingredient in minced meat products and sausages. Fibradan has a very high content of dietary fiber (about 80-90%) which makes Fibradan one of the best fibers available for human consumption.
