2 Biscotto/Allpress Ricciarelli by Allpress Coffee 250gm Ground almonds 285gm Icing sugar 20gm Rice sugar ¼ tsp Cream of tartar ⅛ tsp Baking powder 65gm Egg white (approx 2) 30gm Liquid glucose 1tsp Almond extract 1/ Mix almonds, icing sugar, rice flour, cream of tartar and baking powder for two minutes in bowl of cake mixer 2/ Whisk egg whites and glucose together until foamy. Do not take to soft peak stage. 3/ Pour egg white mixture into dry ingredients 4/ Add almond extract 5/ Mix until dough forms 6/ Dust bench top with a little ground almonds 7/ Roll dough into logs and cut on an angle into 20gm biscuits 8/ Rest biscuits on tray for one hour before baking 9/ Bake at 160 C for 15 minutes until a very pale golden brown

3 Salvagno Olive, Pronto Rosso and Pumpkin Risotto Serves 4 2 cups chicken stock, plus a little extra if necessary Extra virgin olive oil 1 onion, finely diced 1 cup Ferron Carnaroli Italian risotto rice 1 cup dry white wine 1/4 small pumpkin, skin and seeds removed 2 tbsp Sabato Pronto Rosso 1/3 cup pitted Salvagno olives 1 tbsp chopped fresh sage leaves Shaved fresh parmesan 1/ Heat stock in a small saucepan. Heat oil in a large heavybased pan, add onion and cook over a medium heat for 10 minutes until onion is soft but not browned. Coarsely grate pumpkin and set aside. 2/ Add Carnaroli rice to the pan and stir over a medium heat for 2 minutes to toast but not brown. Add wine to the pan and stir until the wine has been absorbed. Add pumpkin, Pronto Rosso and Savagno olives. 3/ Pour in hot stock, stir to combine and cover. Turn the heat to its lowest setting and cook for 15 minutes. The rice should be slightly al dente but add a little extra stock and cook further if necessary. 4/ Add sage and stir well to release the starches from the rice the mixture should be creamy. Cover and set aside for 2-3 minutes to allow the flavours to develop. 5/ Plate risotto into bowls. Drizzle with a little extra virgin olive oil and top with shaved parmesan. Note: This no-stir method only works effectively with Ferron risotto rice.

4 Risotto cakes Makes 36 3 tbsp extra virgin olive oil 1 onion, finely diced 1 cup coarsely chopped pancetta 2 cloves garlic, crushed 1 cup Ferron Carnaroli Italian risotto rice 2 1/2 cups hot chicken stock 2 cups frozen peas 3 eggs, lightly beaten 1/2 cup milk 1/2 cup finely grated parmesan Salt and freshly ground black pepper 1/ Heat a heavy based saucepan or risotto pan sweat onion and garlic in oil over a medium heat. Add risotto rice and allow to toast but not brown, stirring continuously for 2 minutes. 2/ Add hot stock all at once and a little salt and pepper. Bring to the boil, stir then cover and simmer for 15 minutes. Turn out into a bowl to cool. (Or use 2 cups left-over risotto). 3/ Beat eggs with milk in a bowl. Add cold risotto breaking up any lumps with a wooden spoon. Add parmesan and season well with salt and pepper. 4/ Preheat oven to 190 C. Grease 36 mini muffin tins. Fill mixture into tins. Bake for 20 minutes or until firm and golden brown.

5 Baby Bagel BLTs image from: busyveganmama.blogspot.com Makes Abe s baby bagels, split in half Spreadable or low-fat cream cheese, to spread 4 slices crispy fried free-range NZ bacon, drained on paper towels 2 iceberg lettuce leaves, broken into bitesized pieces 2 tomatoes, sliced and drained on paper towels Salt and freshly ground pepper 1/ Lightly spread sliced bagels with cream cheese (or butter or mayonnaise, as preferred). 2/ Layer bacon, lettuce and tomato onto bagel bases. Season with salt and pepper, if desired. 3/ Sandwich together with remaining bagel halves. Wrap in plastic wrap to keep fresh while transporting to picnic spot.

6 MINI CHEESECAKES Makes wine biscuits, finely crushed 50g butter, melted 250g cream cheese, at room temperature 1/2 cup caster sugar 1/3 cup sour cream 1 tsp vanilla extract 2 large eggs 1/ Heat oven to 140 C. Line 36-hole silicon mini muffin pans. Combine biscuit crumbs in a bowl with melted butter. Divide crumbs among cases and press down well with the back of a teaspoon. 2/ In a clean bowl, beat cream cheese and sugar with an electric mixer until light and fluffy. Beat in sour cream and vanilla. Lastly, beat in eggs just enough to combine. 3/ Spoon mixture over biscuit bases. Bake for 15 minutes or until just set. Remove to cool.
