3 Krazy Days 2016 NEBS BBQ Contest Official Rules Thank you for entering the Krazy Days 2016 NEBS BBQ Contest! The Krazy Days 2016 NEBS BBQ Contest will be a two-category barbecue-cooking contest to determine Grand Champion and Middleborough Cranberry Country bragging rights! Categories: Space: The categories that will determine Grand Champion will be: Chicken Wings and Pork Ribs Contestants may enter either category, or both, as they desire. Both categories must be entered to be eligible for Grand Champion. Grand Champion will be determined by the combined total scores of the two categories. Chicken Wings are described by the Krazy Days 2016 NEBS BBQ Contest as any part of the wing of a chicken served whole or in sections as the cook sees fit. o Turkey wings, duck wings, or the wings of any other fowl will not be allowed. Pork Ribs are described by the Krazy Days 2016 NEBS BBQ Contest as any style of pork rib, including Loin Back Ribs, Baby Back Ribs, Spare Ribs, St. Louis Ribs, Country-Style Ribs, or Southern Style Ribs. o Beef ribs, or the ribs of any animal besides pork will not be allowed. Standard NEBS Garnish Rules apply. Each cooking site will be at least 20 x 20 and all tents, tables, grills, cookers or smokers MUST fit within each team s assigned space. Sites will be reserved on a first come first served basis. Water will be available for free (you must bring your own food safe hose, Y connector, and carrying buckets). Ice will be available for sale. Indoor & Outdoor restroom facilities will be available. The indoor bathroom facilities will only be available on Friday, August 5 th from 4-10pm and Saturday, August 6 th from 6:00am-5:00pm. There is no security the evening of Friday, August 5 th, so please do not leave your valuable possessions unattended. Food Safety Rules: Each cooking team must provide a three-stage washing station, consisting of a tub or pan of soapy water, a tub or pan or rinsing water, and a tub or pan of disinfecting water. Sanitation will be checked at meat inspection and periodically throughout the event. Use a food-safe sanitizer, which fall in the range of parts bleach per million. Water will be available at the contest, but please bring appropriate test strips to confirm appropriate solution. 3 P a g e K r a z y D a y s N E B S B B Q C o n t e s t

4 Proper storage of meat is required. It must be maintained below 40F before cooking or above 140F after cooking. Each cooking team is expected to adhere to the highest food-safety procedures, and latex or vinyl gloves are recommended when prepping and handling meats, and are required for handling Ready-to-Eat (RTE) foods. Each cooking team must have a fire extinguisher on their site at all times during the event. Cooking Rules: Judging: Any type of fuel source the cook wishes to use will be allowed, including, but not limited to: charcoal, wood and propane. Each cooking team must provide their own cookers, grills or smokers, and no team may share their grills, cookers or smokers with any other cooking team. All cooking must be done in the grills, cookers or smokers provided by the team, and no cooking will be allowed on the ground, or in the ground. Each cooking team must provide their own meats from an approved source, seasonings, sauces, garnishes, and all tools and utensils necessary to cook and serve their entries. All food must be cooked on-site, and no pre-seasoning, pre-marinating, brining, or any other type of preflavoring of the contest meats will be allowed, until the meat has been inspected after arrival at the cook-off site. Meats may be rinsed, plucked, skinned and/or trimmed before arrival at the cook-off site, but no flavors may be added to the contest meats until they are inspected. Contest meats may not leave the cook-off site after inspection. Once the meats are inspected, they may be rubbed, injected, marinated or otherwise flavored and cooked, as the cook sees fit. Once cooked, all entries may be presented for judging dry, basted, sauced, or otherwise flavored as the cook sees fit. A 9 x 9 Styrofoam container will be provided to each cooking team for each entry. Each entry will be judged by 6 judges. All entries will be judged on the following three criteria: Appearance, Tenderness, and Taste. The official Northeast Barbecue Society scoring system will be used, and NEBS standard garnish rules apply. Garnish is optional. If used, it is limited to chopped, sliced, shredded or whole leaves of fresh green lettuce, curly parsley, flat leaf parsley and/or cilantro. Kale, endive, red tipped lettuce, lettuce cores and other vegetation are prohibited. (Improper garnish shall receive a score of one (1) on Appearance). At least SIX (6) separate portions of wings or ribs must be presented in the provided container, along with whatever legal garnish the cooking team chooses to use in order to enhance the appearance of their entry. The container must be closed when it is submitted for judging. Anything in your container that hints at, or gives away your team or team name will be grounds for disqualification. The double-blind judging system will be used, meaning that no judges will know which team s entry they are judging at any time. Medallions and/or trophies along with cash prizes will be awarded for first, second and third place in each 4 P a g e K r a z y D a y s N E B S B B Q C o n t e s t

5 category. A trophy and cash will be awarded to the Grand Champion, which will be determined by combining the total points of the 2 categories. NEBS 2016 Tailgate team: The scores from this contest will count towards NEBS 2016 Tailgate team of the year points. In order for a competition team to have their scores count towards NEBS Team of the Year honors, the chief cook that signed the contest application for the team must be a paid member of NEBS when the contest takes place and must be present at the competition. Any scores accumulated after the listed chief cook is no longer a member, by a vote of the Board of Directors for non-payment of dues or any other reason, will not count towards NEBS Team of the Year. Team of The Year Registration: All teams must register in order for their scores to be included in the 2016 NEBS TOY calculations and rankings. If you do not register your team, your scores will not count towards NEBS TOY. Registration is free and only takes a couple minutes. Visit here to register: o The registration deadline is September 1, Clean-Up: Each cooking team is expected to leave their cooking site in equal or better condition than it was when they arrived, and each team s cooking site will be inspected when they leave the event. Receptacles will be available on-site for grease and ash disposal. Please bring separate containers for transporting grease and ashes to the proper receptacles. Trash must be removed by each competitor (dumpsters are available). All cooking areas MUST BE cleaned up BEFORE teams leave the contest. All live coals must be disposed of properly, according to the organizers directive. Sites shall be left at the conclusion of a contest in the same, or better, condition than they were upon arrival. Failure to obey this rule may result in further action against a team, such as, but not limited to forfeited fees or disqualification from future NEBS events. It is a requirement of this barbecue contest that all contestants, their friends and family, and anyone they may come across has fun, and enjoys the sport of barbecue! 5 P a g e K r a z y D a y s N E B S B B Q C o n t e s t

Meat inspection continues as cooking teams arrive, and at the convenience of the meat inspectors. Community Dinner Tickets are available for the Community Dinner on Friday evening. Let us cook for YOU on Friday night. For more information, please contact Midnight-6:00am Quiet Hours Saturday August 6, :00am 7:00am-9:00am Cook teams may arrive. Meat inspection resumes at the convenience of the meat inspectors. Free coffee and pastries will be available for the cooking teams, courtesy of Middleborough On the Move. 9:00am Cooks Meeting at the Judging Area to clarify rules, distribute turn-in boxes and answer any questions. 11:15am-11:30am People s Choice Chicken Wings and Pulled Pork are due to be turned in at the People s Choice Pavilion near the tent. Participating teams provide samples of each product to be judged by visitors to Krazy Days. Winners will receive awards, bragging rights and a portion of the gate. 12:00pm N.E.B.S. Judges Meeting at the Judging Area 1:00pm Chicken Wings turned into the Judging Area. Don t be late!! 1:30pm Pork Ribs turned into the Judging Area. Don t be late!! Approx. 3:30pm Awards Ceremony. Bring your Best Chicken Wings and Pulled Pork to the Judges Pavilion by 11:15 am on Saturday August 6 th The People will decide who has the BEST CHICKEN WINGS and the BEST Pulled Pork in all the Land! Bragging rights are at stake. Who will earn the right to fly the Winner s Banner?

9 Instructions: 1. Submit the reservation form on the right side of this page as soon as possible. 2. Submit your ServSafe certification no later than July 25 th. 3. Cook Chicken Wings and/or Pulled Pork YOUR way, at a licensed kitchen (or NEBS cooksite). 4. Arrive before 11:15 AM at the Judges Pavilion, Massasoit Community College, 49 Union Street. 5. Bring enough wings and/or pulled pork to offer 100 samples in your own serving pans & utensils. 6. You will need to keep the wings and/or pulled pork at the correct serving temperature until the Board of Health Inspector has visited to inspect. 7. Sampling Plates & Napkins will be provided. 8. Tickets will be sold to the Judges (the PEOPLE!) who will present a ticket to receive one sample wing or pulled pork. 9. After eating your amazing wings and/or pulled pork, Judges will vote by placing their Voting ticket in ballot box of their preferred sample(s). 10. Voting tickets will be counted and Winner shall be declared and prizes awarded at approximately 3:30pm on Saturday, August 6 th. Prizes will be awarded for 1 st, 2 nd, and 3 rd place based on the number of votes received. 50% of the ticket fees collected for the Peoples Choice Contest will be divided among the winners as follows: 1 st Place = 50%, 2 nd Place = 30%, 3 rd Place = 20%. 11. The decision of the Judges is final.
