2 DO I QUALIFY? Who May Enter ADULT California residents 19 or older may enter all Special Culinary Contests. YOUTH California residents ages 9-18, are invited to enter the Special Contests, however this is an open contest and youth entries will compete with adults. Competitions are open to amateurs and professionals, entering as individuals. HOW TO ENTER Enter Online at the following links: Spam Contest Dip Into the Fun Contest Sweet as Honey Entries Must be submitted under the name of the individual who prepared it. Do not use business or fictitious names. There are no team entries. Please enter using the exhibitor s name as it will appear on the display tag. Entry Confirmations You will receive an notification and confirmation immediately when entry is received. If your confirmation does not appear, check your junk/spam folder first before contacting the OC Fair at Processing Fees No processing fees. Entry Limit Check each individual contest for the entry limit restrictions. Pre-Registration & Free Admission Pre-register deadlines are on the Wednesday before the contest in order to receive one free OC Fair admission per entrant. Pre-registration is not required to enter, but is required to receive a free admission ticket. If you have not pre-registered, please bring your entry to our Express Entry Drop- Off on the day of the contest to participate. Entrants who did not pre-register will need to purchase an OC Fair admission ticket to get to the contest stage and area. 2
3 HOW TO DELIVER Your Entry to the Fair... Where to Deliver Entries All Special Contest Entries will be accepted at the Express Entry Drop-Off area only. Entries will not be accepted at the stage. Express Entry Drop-Off Enter through the Main (Blue) Gate located off Fair Drive, and proceed to the passenger pickup/drop-off area. Park temporarily and take your entry to the drop-off table. Contestants must check-in their entry between 11 am and Noon on the day of competition. The table will close promptly at Noon. Each pre-registered exhibitor must be present to receive an admission ticket. Entries may be delivered by another person, however to receive the free Fair admission ticket the entrant must be present. After your entry is checked in, please proceed to the nearest parking lot and enter the Fair through a public entry gate and walk to the OC Promenade for the contest and judging. OC Fair staff will transport entries to the OC Promenade Stage for judging. Have your 3-inch by 5-inch ingredient card ready when checking in your entry. 3
4 HOW TO PREPARE for the Special Contests... Please take note of the delivery dates for the contest you have entered in. Entries will be transferred into a container provided by the Fair. No decorated containers/plates are allowed. Entry must include typed or legibly printed ingredients on a 3-inch by 5-inch card. List should not include your name. All entries must be ready to be judged. Exhibitors may not touch entries once they are turned in. THINGS TO KNOW... Contests are judged at the OC Promenade Stage and are open to the public. Due to Orange County Health Department food restrictions, items will not be publicly sampled; only judges will taste foods entered. After judging, food will be transferred into appropriate display containers and all entries will remain on display (as long as possible) with exhibitors name and award placing. Entries will only remain on display until food becomes deteriorated. Food entries become the property of the OC Fair upon delivery and will not be returned to the exhibitor after judging. Judging results will be available online one week after each contest at ocfair.com/results HOW IS MY ENTRY JUDGED? Judging System Placed using the American Judging System where exhibits are ranked one against another (1st-10th Place.) 1st Place winners will compete for Category Winner. Category Winners compete for Grand Winner. Judging The decision of the jurors is final. Judges and/or the Program Coordinator have the option of changing the requested category of a submitted entry. Categories may be combined to create an adequate judging pool. If an entry is disqualified after judging is completed, the judge will not change the status of awards given for other entries. 4
5 RULES We Need You to Read Read Competition Guidelines. Changes are made each year. Review the Fine Art Rules/Guidelines below and the OC Fair Guidelines at the end of this Guide. Non-compliance will disqualify your entry. 2. Exhibitors are solely responsible for reading the competition guidelines and rules, and entering their items in the correct Divisions/Classes. Incorrect entries may result in disqualification and may not be exhibited. If you need assistance determining the Division and/or Class, please contact the Exhibits Office at (714) or Someone should contact you within 48 hours. Personal assistance is also available during Help Days, see Need Help on the bottom of this page for dates and times. 3. No refunds will be issued for items incorrectly entered by the exhibitor or for juried-out entries. 4. Food entries do not need to be baked from an original recipe, but must be handmade by the entrant from scratch and not a prepared mix. 5. An ingredient list must accompany each entry on a 3-inch by 5-inch card. List should not have your name. 6. No fresh fruit garnishes. 7. Exhibitors may not touch entries after submitting for show. 8. Food items will be discarded after each show or when they become deteriorated. WHO ARE THE JUDGES? Judges Qualified judges are selected by the Program Coordinator and are selected from local professionals who are experienced and highly qualified in their fields. Judges may judge different divisions from year to year. RIBBONS, YEA! Ribbons are awarded for 1st Place to 10th Place in each category, as well as Special Category Awards and Grand Winners. No cash premiums are offered. Additional prizes may be offered. You may pickup your ribbon at the conclusion of the judging on the Promenade Stage as your name is announced or at the culinary information booth adjacent to the promenade stage any time during the open days of the OC Fair. 5

Make any dish, dessert or appetizer that features our beloved canned ham and some level of sweetness. The most creative and delicious efforts will be rewarded! Two Categories: 1 for Adults - 1 for Children (Adults: Ages 18 & Up, Kid Chefs: Ages 7-17) Local SPAM Champion Prizes: 1st Prize $150; 2nd Prize $50; 3rd Prize $25 (Adults) Local SPAM Kid Chef Prizes: 1st Prize $60; 2nd Prize $30; 3rd Prize $10 (Kids) Two National Grand Prizes: 1) National SPAM Champion Grand Prize: A Trip for Two to the 2017 Waikiki SPAM JAM Festival in Hawaii valued at $3,000 (Adult Grand Prize)*; 2) National SPAM Kid Chef of the Year Grand Prize: $2,000 cash prize Judging Criteria: Theme (40%) + Taste (40%) + Ease of Preparation (10%) + Presentation (10%) Contest Rules: Make any sweet and savory themed recipe with at least one 12-ounce can of SPAM products any variety (Classic, Lite, Less Sodium, Hot & Spicy, or other) and up to 10 other ingredients. (Packaged items such as cake mixes and other timesavers are welcome and count as one/individual ingredient. Salt, pepper, cooking oil, water and garnishes do NOT count.) Judging Criteria is to emphasize the sweet/savory theme (creativity); prioritize taste (as in overall flavor and SPAM product presence); and to address the recipe s clarity, simplicity and visual appeal. Recipes should be named, original, unpublished, the sole property of entrant, and not used for another contest. Submit your entry with a clear/typed recipe (illegible recipes may be disqualified), a product label and your contact information. One entry per person. No SPAM recipe contest 1st place winners from any fair in 2015 are eligible to win in 2016, nor are those who have won 1st place three or more times. All recipes become the property of Hormel Foods Sales, LLC, which has the right to publish or advertise the recipes and contestants without compensation. Judges are chosen by the fair; their decisions are final. Hormel Foods is not responsible for lost recipes, nor is the fair. All winners are required to sign a release provided by Hormel Foods. Winner awards will not be distributed until their releases are received. All contestants including fair winners, finalists and the national grand-prize winners shall not make any public appearances or give any interviews associated with this competition without the permission of Hormel Foods or the Blue Ribbon Group. Taxes on the prizes are the responsibility of the winner. Employees of Hormel Foods Corporation, its affiliates, subsidiaries and families of each are not eligible to participate. National Judging & Grand Prizes: Fair contest supervisors forward 1st place winning recipes for national grand prize judging for both Adult and Kid Chef categories. Hormel Foods Test Kitchens judge recipes on the above criteria. Their decisions are final. For the National SPAM Champion Grand Prize (adult: age 18 & up) one national grand-prize winner will be selected out of all 26 1st place recipes. He/she will receive a voucher to cover $3,000 in travel costs (airfare, hotel and food) for the 2017 Waikiki SPAM JAM Festival in Hawaii. The national grand-prize winner may elect to accept a $3,000 cash prize instead of the trip (ARV $3,000). One National SPAM Kid Chef of the Year (kid chef: age 7 to 17) will be selected out of all 26 1st place recipes and he/she will receive a $2,000 cash prize (ARV $2,000). Both grand-prize winners will be notified by phone no later than Feb. 28, If Hormel Foods is unable to reach the grand-prize winners within 10 days of notification, an alternate may be selected. Limit 2 entries total per contestant. Enter each entry on a separate online entry form. Include an ingredients list with each entry on a 3-inch by 5-inch card. Do not include your name. Food will be transferred and judged in containers provided by the OC Fair. Entries will be judged on appearance, texture, flavor and creativity. ENTER ONLINE click here.
