1 Basics Include the following recipes 1. Basic Napoli Sauce 2. Basic Pizza Dough. 3. Basil Pesto. 4. Gnocchi 5. Pizza Toppings 6. Salad of Imagination 7. Savoury Scone Basic Napoli Sauce 2 tins of tomatoes 2 medium brown onions, diced 4 cloves garlic, chopped Olive Oil Parsley, finely chopped Basil, chopped Oregano, finely chopped 1. Heat oil in a saucepan over medium heat. Add diced onions and gently sauté until soft add garlic and continue to cook gently until golden in colour. 2. Add tomatoes and simmer gently for 10-15mins. 3. Add herbs to sauce and simmer for another 5mins. Season with salt and pepper.

2 1 tin tomatoes Garlic Dried herbs Salt & pepper Pizza Sauce Gently sauté garlic in olive oil until golden, Add tomatoes and dried herbs, simmer gently for 20-30mins until reduce and thick. Season. Basic Pizza Dough 500g plain flour or baker s flour Salt 2tsps dried yeast 2tbls sugar ¾ to 1 cup Warm water 2 tbls Olive Oil 1. Place flour, salt, sugar and yeast in a large bowl. Combine. 2. In a measuring jug combine olive oil and warm water. 3. Make a well in the centre of the flour mixture and slowly add the water mixture, mixing in a circular motion as you add. The flour should start to come together, continue to mix until all flour is combined and you have a ball of dough. 4. Turn dough out onto a floured surface and knead until it becomes smooth and elastic (about 10mins). 5. Return kneaded dough to the bowl. Cover and place in a warm place to rise. 6. Once the dough has doubled in size, remove from the bowl and knocked out the air by kneading once more (about 5mins). 7. Roll dough out to desired shape and size. (To fit tray) Place on an oiled tray and put aside for toppings.

3 Basil Pesto - 100g parmesan cheese, grated 2 large handfuls of basil leaves ½ cup sunflower seeds Garlic clove ¾ cup olive oil Salt & pepper to taste Prepare all of the ingredients based on the instructions in the ingredients list. 2. Place the parmesan in the bowl of the food processor. 3. Gently pull the basil leaves from their stems and place them in the bowl of the food processor. 4. Dry-fry the sunflower seeds in the frying pan over a medium heat until golden. 5. Add the garlic to the food processor along with the toasted sunflower seeds. 6. Process the mix until you have a rough paste. With the motor running, slowly add the olive oil. 7. Taste for salt and season if necessary. 8. Using the spatula, scrape the pesto into a saucepan. 9. Cook and warm through just before serving.

4 Gnocchi 1 ½ kg Desiree Potatoes Approximately 350g plain flour 1 egg salt - 1. Boil the potatoes in their skins and until tender. 2. Remove from the water and allow them to cool slightly before peeling. 3. Put each potato through the ricer. Do not mash as it will become too gluey and your gnocchi will not be light. 4. Pour the flour onto a clean surface and empty the mashed potatoes over the flour. Add the egg. 5. Knead the mixture until a soft dough forms. You may need a little extra flour to stop the mixture sticking to the surface. 6. Cut the dough into four even pieces, then roll each piece into 2 cm wide logs. 7. Using a butter knife, cut the logs at ½ cm intervals to create gnocchi, then press each lightly over a fork to create ridges on the gnocchi.

5 Pizza Toppings Leek and Zucchini Sliced leeks- cooked slowly until soft Thinly sliced zucchini chives Salt and pepper cheese Spinach, roast pumpkin and feta Baby spinach leaves, roughly chopped Roast pumpkin Feta Sunflower seeds Napoletana Pizza sauce Fresh tomatoes, sliced Pizza thyme cheese Mushroom, balsamic red onion and parmesan Mushroom, sliced Red onion, finely sliced, cooked slowly with balsamic vinegar Parmesan cheese Rocket for serving

6 Kale Salad of Imagination Kale leaves, roughly chopped Tomatoes, diced Snow peas Cucumber, diced Avocado, diced, squeeze of lemon juice Tin of brown lentils Salt & pepper Dressing Olive Oil Vinegar 4 tsps Sugar 1 clove garlic, grated ½ tsp mustard 1. Prepare all salad vegetables and place in a large bowl. 2. Prepare dressing in a small jar and shake well. 3. Dress salad and season.

7 Savoury Scone 200g self raising flour 1/2 teaspoon mustard powder 1/2 teaspoon cayenne pepper 1/4 teaspoon salt 40g margarine or butter 60g grated cheddar cheese 100ml milk Heat oven to 220 degrees C and lightly grease a baking tray. Sift flour, mustard powder, cayenne pepper and salt into a mixing bowl. Cut the margarine into small pieces and add to flour. Rub the margarine into the flour with fingertips until the mixture resembles fine breadcrumbs. Stir in grated cheese. Add the milk gradually, stirring well with a knife until the mixture begins to stick together. With your hands, knead the mixture gently to form a soft smooth dough. On a floured surface flatten or roll the dough to about 3cm thick. Use a 5cm round cutter to cut out individual scones. Place scones on the greased baking tray. Brush with milk and sprinkle some extra cheese on top. Cook for about minutes until golden. Cool slightly before serving.
