2 TRAPPIST In 1997, eight Trappist abbeys founded the International Trappist Association (ITA) to prevent commercial companies from abusing the Trappist name. The criteria for being labeled as such are the following: The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision. The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life. The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need. Trappist breweries are constantly monitored to assure the irreproachable quality of their beers. This association has a legal standing, and its logo gives the consumer information and guarantees about the product. Currently there are eight monasteries actively producing beer, six of which are from Belgium: Achel, Chimay, Orval, Rochefort, Westvleteren, and Westmalle One is from the Netherlands (La Trappe) and the other (Stift Engelszell) from Austria. ORVAL TRAPPISTES 330ml % ABV, 32 IBU, BELGIAN, In contrast to all the others, the Orval Trappist brewery makes only one beer for the general public. It has an intensely aromatic and dry character. Between the first and second fermentations there is also an additional dry-hopping process. Through this the beer acquires its pronounced hoppy aroma and extra dry taste. WESTMALLE DUBBEL 330ml % ABV, 28 IBU, BELGIAN, reddish brown, malty and fruit, featuring a 3 week secondary fermentation. CHIMAY PREMIERE (RED) 330ml % ABV, 28 IBU, BELGIAN, coppery color with a creamy head, it gives off a light, fruity apricot aroma, harmoniously balanced malt and hop balance out the original Chimay. STIFT-ENGELSZELL BENNO 330ml % ABV, 28 IBU, AUSTRIAN, Named after Abbot Benno Stumpf who arrived at St.Engelszell after being expelled from Abbey Mariastern during World War II. Under his leadership Stift Engelszell renovated its buildings and church which was built in the mid 18th century in a Rococo Style. Malts used: Pilsner Malt, Caramalt Hops: Mühlviertler Spalter Select, Mühlviertler Aurora, Alsacian Strisser Spalter Yeast of primary fermentation: Saison ale yeast Yeast of secondary fermentation: Alsacian wine yeas CHIMAY TRIPEL (WHITE) 330ml % ABV, 36 IBU, BELGIAN, slightly hazy golden appearance, fine head, fruity notes of muscat and raisins give this beer a particularly attractive aroma that is complemented by a mild bitterness. ACHEL TRAPPIST BLONDE 330ml % ABV, 30 IBU, BELGIAN, Dutch monks built a chapel in Achel in The first beer to be brewed on the site was the Patersvaatje in 1852, and 19 years later in 1871, the site became a Trappist monastery, with beer brewing a regular activity. Achel Blonde has an intense character full of hop flavours, rounded with a touch of spiciness and a typical yeast flavour. The soft bitterness of the hops used is pronounced in the long-lasting aftertaste. 1

CHIMAY GRAND CINQ CENTS ANNIVERSARY EDITION 750ml % ABV, 26 IBU, BELGIAN, To celebrate the 150 years spent at the Abbey of Scourmont, the Chimay Trappist brewery has developed this exceptional anniversary beer, brewed specially for the occasion. Of the 150,000 bottles produced, approximately half will be exported out of Belgium. The distinctive bouquet evokes the rich fruity and complex notes of the Chimay yeast in harmony with a delicate spicy note and the fragrance of fresh noble hops. CHIMAY GRAND RESERVE (BLUE) 500ml % ABV, 30 IBU, BELGIAN, This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavor, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma, while revealing a light but pleasant touch of roasted malt. ROCHEFORT TRAPPISTES 8 330ml % ABV, 22 IBU, BELGIAN, dark copper color, complex and full bodied with a warming alcohol finish. WESTMALLE TRIPEL 330ml % ABV, 37 IBU, BELGIAN, golden yellow, aroma of fresh hops and banana esters, citrus and a slightly salty bitterness round out the sweet malt profile. ROCHEFORT TRAPPISTES ml % ABV, 27 IBU, BELGIAN, flavor of fig and raisins, a touch of anise and delightful alcohol warmth. SOUR Sour beers are the result of fermentation by wild yeast, from either pitching a cultured yeast strain, or allowing wild yeast to ferment spontaneously. A myriad of sour ale styles are now being explored, from barrel aged Flanders Red Ales, to thirst quenching American Wild Ales. This is one of the most exciting new areas of craft beer being developed today. MIKKELLER SPONTANOBLE 375ml % ABV,? IBU, DANISH, The beer that first enters an oak barrel during the formation of Mikkeller s Lambic style ales is usually the same. Had no fruit been added to the barrel you would get something that resembles a Gueuze. This batch of spontaneously fermented ales is aged in sauternes barrels, picking up some of that wonderful Noble Rot character. CUVEE JACOBINS ROUGE 330ml % ABV, 10 IBU, BELGIAN, unblended old lambic, aged for 18 months or more. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. DUCATO BEERSEL MATTINA 750ml % ABV,? IBU, ITALIAN, eighty-two percent Nuova Mattina (ale brewed with coriander, ginger, green pepper, and chamomile) and eighteen percent 3 Fonteinen lambic, which adds mouth watering acidity, and that classic wild yeast aroma of hay and sourdough bread. The resulting blend is then bottle aged for a minimum of eighteen months. Dedicated to the beauty of a new spring morning with the first sunrays warming the blossoming flowers. Pours a hazy orange color with a scent reminiscent of field flowers. 2

JOLLY PUMPKIN LA ROJA 750ml % ABV, 25 IBU, AMERICAN, amber ale brewed in the Flanders tradition, caramel, spice, and sour fruit notes, unfiltered, unpasteurized and blended from barrels ranging in age from two to ten months. Bigger body than its predecessors makes it a little more fun to drink! SOBREHUMANO PALENA OLE 750ml % ABV, 24 IBU, AMERICAN, red ale brewed with liliko i and Michigan cherries. Brewers Ron Jeffries (Jolly Pumpkin) and John Walsh (Maui Brewing) spent time in each other s breweries to craft this ale. Both versions of Sobrehumano Palena Ole were introduced at SAVOR, an annual craft beer and food exposition, held in Washington DC each June. This version is an open-fermented, barrel aged and bottle conditioned sour ale, using naturally occurring wild yeasts. Approximately 850 cases produced. JOLLY PUMPKIN BIERE DE MARS 750ml % ABV, 20 IBU, AMERICAN, Farmhouse ale. A sustaining beer that is brewed to comfort in the gusty ides of March and welcome in a wealth of warmer weather. Lots of brewers use oak barrels to age their beers these days, but Jolly Pumpkin actually ferments in the wood, and the result is beer of extraordinary complexity and earthiness. Despite the risks of fermenting in oak, however, these beers are nicely balanced and drinkable, and don t seem to suffer from the oxidation and off-flavors so common in aged beer. Jolly Pumpkin ales lean toward a subtle but pleasant lactic sourness that fits perfectly with the wild yeast flavors derived from the wood. JOLLY PUMPKIN LA PARCELA 750ml % ABV, 37 IBU, AMERICAN, so the joke was that Jolly Pumpkin doesn t brew a pumpkin beer. Well, now they do. Packed with real pumpkins, hints of spice, and a gentle kiss of cocoa to liven the soul. An everyday easy way to fill your squashy quotient. Guess now folks will have to find something else to joke about... ANCHORAGE ANADROMOUS 750ML % ABV, 30 IBU, AMERICAN, Brewed with Summit Hops. Triple fermented. First in stainless tanks with a Belgian yeast. Second in French Oak Pinot Noir barrels with Brettanomyces, Lactobacillus, and Pediococcus (a bacterial cocktail commonly found in sauerkraut and kimchi). BFM CUVEE ALEX LE ROUGE 330ml % ABV, 70 IBU, SWISS, imperial stout created in the honor of the Jurassian revolutionary by the same name. An extremely complex stout that is brewed with Serawak black pepper, Bourbon vanilla and Russian tea, the mouth feel is chewy with a healthy hoppy presence and long finish with a subtle sour tinge. BFM ABBAYE ST. BON CHIEN VINTAGE ml % ABV, 50 IBU, SWISS, aged in wooden casks, which have been used for several years before to age Merlot, Cabernet Sauvignon, Whisky and then Grappa. It manages to merge into L'Abbaye all the complex aromas of a vintage red wine along with the delicate harmony and flavors of the wood and its former contents. The final version is blended from different casks, to ensure optimal balance, complexity and enjoyment! A mere one thousand bottles have been earmarked for the US market in

5 LAMBIC Traditional beer brewed in the Pajottenland region of Belgium, near Bruxelle, fermented by leaving the wort exposed to the atmosphere and wild yeast. Fermentation only takes place from October to May in order to reduce contamination. Part of the reason for the complexity of these brews is due to the aging process, which usually includes blending one, two and three year old beers. CANTILLON GUEUZE 375ml % ABV, 15 IBU, BELGIAN, the breweries staple, tart lemon, vinous flavor and aroma. CANTILLON ROSE DE GAMBRINUS 375ml % ABV,? IBU, BELGIAN, it has the color of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the color of the raspberry Lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavored beer. This is why we decided to distinguish our beer from the other raspberry beers. IBU, BELGIAN, The Cantillon brewery is closely linked to Brussels, a city which has the Iris as its symbol. As the name indicates, the "Marsh Iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly. In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion. Made with malt of the pale ale type (giving a more amber color to the beer) conserves the typical flavor of the spontaneous fermentation, the complex aromas and the vinous taste. After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense flavor and aroma HANSEN S GUEUZE 375ml % ABV,? IBU, BELGIAN, hazy gold color and an aroma of wet wool, preserved lemons, vanilla, and earth. The palate is sharply tangy and dry, opening up to a marvelously complex display of citrus and damp earth in the center. The finish is miles long and juicily acidic, with a final flourish of fruit. IBU, BELGIAN, Only fresh cherries are used in this brew, which is slightly sweet, with the surprising natural fragrance of sour cherries and almonds, it is a perfect summer beer. BOON FRMBOISE 750ML % ABV,? IBU, BELGIAN, Brewed according to the traditional Lambic style of spontaneous fermentation. Only fresh raspberries (25%) and wild cherries (5%) are used for this beer. Framboise Boon is the missing link between beer and wine and is served chilled in flute glasses. Contains no artificial sweeteners, flavorings, preservatives or coloring agents. Brewed in Lembeek, the village that gave Lambic its name. HANSEN S OUDBEITJE 375ml % ABV,? IBU, BELGIAN, the strawberries announce themselves in the nose, where they mingle with aromas of earth, sharp cheddar cheese, vanilla, yogurt, and a Riesling-like petrol note. The flavors turn out to be surprising - gentle sweetness quickly followed by fine acidity, and a wonderful fruitiness. 4

6 MEAD Known as the ancestor of all fermented drinks; it is essentially the result of fermenting a honey and water mixture; although, may also include grain mash which gives it a more beer-like flavor. Meads can be flavored with herbs and spices and be sparkling or still and dry to sweet in finish. B. NEKTAR NECROMANGOCON 500ml % ABV, AMERICAN, brewed with mango and black pepper, sweet base with bursting fruity aroma that is balanced with dank pepper earthiness and spice. Wonderful intro to the exciting world of mead, rated 90 points on Ratebeer. MOONLIGHT MEADERY WILD 375ml % ABV, AMERICAN, A pleasurable indulgence, Wild is made from unprocessed New Hampshire wildflower honey and wild mountain grown blueberries. It's about the pleasures in life that we get, well... Wild about! Curl your toes with this melomel, sip, relax and think about what or who you are Wild about. WHEAT Wheat although, related to barley, produces a completely different style of beer when added to the mash. Traditional examples are white ales (or witbier), Berliner Weisse, or Hefeweizen. These styles are typically light and cloudy yellow in color and display crisp citrus notes, and a creamier mouthfeel. HOEGAARDEN 330ML % ABV, 13 IBU, BELGIAN, The original wheat beer is the oldest and most famous of Hoegaarden s range. When poured, it forms a soft, white creamy head and leaves a generous lacing on the glass. Its naturally cloudy, pale hue shimmers when viewed through the glass. With an aroma of orange peel, coriander and spice, its characteristic taste is entirely unique: smooth, light-bodied, and simultaneously sweet and sour, with a subtle, spiced citrus flavor. IBU, JAPANESE, The mikans used in this brew are fresh, succulent, and local, harvested by the hand of our carpenter friend. Both peel shavings and juice are added to the brew at different stages of production. The mikans serve to add depth and complexity to an already sumptious ale; their role is to complement, not dominate. In addition to mikans, the 2009 Carpenter s Mikan Ale incorporates a grain bill including Maris Otter pale ale malt, wheat malt, unmalted wheat and two types of Japanese sugar (sudakito and akato). The hopping schedule features cirtrusy Centennial and Cascade varieties including dry-hop additions to the conditioning tank. BLANCHE DE BRUXELLES 330ML % ABV, 18 IBU, BELGIAN un-filtered light bodied wheat beer infused with bitter orange peel and coriander DE PROEF LA GRANDE BLANCHE 750ml % ABV, 17 IBU, BELGIAN, Beautiful hazy golden color capped by bright white foam. 7 SAISON French for season, these farmhouse ales were once the drink of choice for farmers in Wallonia, the French speaking region of Belgium, due to their low alcohol content and thirst quenching quality. Once a nearly extinct style of beer, unique renditions of Saisons have been popping up throughout the brewing world over the past few years. CROOKED STAVE VIEILLE ARTISANA 375ml % ABV, 20 IBU, AMERICAN, Vieille meaning Old is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille s character exemplifies artisan Saisons. DE PROEF SAISON IMPERIAL 750ml % ABV, 30 IBU, BELGIAN, While the style is generally known for its light body and subtle spice, Saison Imperial is a bolder, "mega" interpretation of the style. Light amber in color, funky wild yeast notes and spice to the nose, with a bit more malt character, body, and hop notes as appropriate to the "Imperial" style. In the U.S. this style of beer is usually heavily hopped. This is not always the case in beer from other parts of the world. AECHT SCHLENKERLA HELLES 500ml % ABV, 30 IBU, GERMAN, brewed with fine Bavarian aroma hops from the area around the city of Nürnberg. It s lagered in century old caves underneath the historic Schlenkerla brewery. Boiled in the same copper kettles and bottom fermented by the same yeast as the historic Schlenkerla Smokebeer. Its subtle smokiness without using smoke malt makes for a unique representative of the classic lager beer style. DE MOLEN BED AND BREAKFAST 330ml % ABV, DUTCH, one of the brewery s more experimental endeavors, brewed with coffee and dry hopped, hazy copper hue, fluffy off white head exudes an aroma of chili, slight astringent, bitter finish PRETTY THINGS X ml % ABV, AMERICAN, English Mild, working class ale brewed strictly with pale malt, robustly hopped with Kent Goldings hops, part of a historical beer project by Pretty Things called Once Upon a Time. 6

8 IPA India Pale Ales get their name and flavor profile from the their historic travels from England to India. In order to survive the journey, these beers were loaded with hops, a natural preservative. Hops also have a reputation for making beer bitter. Love for this cannabinoid has led to the breeding of many new strains of hops, specifically chosen for flavor, aroma, and bittering level. The bitterness of a beer is measured in International Bitterness Units (IBUs). MIKKELLER/GRASSROOTS WHEAT IS THE NEW HOPS 330ml % ABV, DANISH, incredibly refreshing wheat IPA, finished with Brettanomyces to add a subtle sourness, pours a bright hazy yellow, grassy with some nice tropical fruit notes. Peppery and spicy hop flavors. TOCCALMATTO B SPACE INVADER 750ml % ABV,? IBU SPANISH, black IPA, intense malt, balanced by bright hops that exhibit a delicate fruity aroma and potent bittering level. DE LA SENNE KURO ONI BLACK IN JAPAN 330ml % ABV,? IBU, BELGIAN, Collaboration with Dieu du Ciel, Pours a thick dark brown with aromas of chocolate and stewed fruit. Hop aromas come off as earthy and piney, with a touch of coffee. TO ØL BLACK MARIA 750ml % ABV,? IBU, DANISH, American inspired Black IPA. It is as black as a stout and hoppy as an IPA. The beer has been brewed with a good amount of highly roasted Carafa Malts, but with a relatively low amount of caramel and chocolate malts. This way we get the burnt bitter and delicate chocolate notes, along with the bitter and fruity aromas of the hops. The lack of caramel and chocolate results in less residual sweetness than you normally pick up from a stout. MIKKELLER NELSON SAUVIN BRUT 750ml % ABV,? IBU, DANISH, New Zealand hop variety Nelson Sauvin which is named after its grape characteristics that bring memories to the New Zealand white wine grape Sauvignon Blanc. Both champagne and brettanomyces yeasts are used to create a bouquet of citrus, brioche and funk, that also carries over to the palate. After fermentation the beer is aged for 5 months in white wine casks from Austria to enhance the vinous qualities and add an unrivaled level of complexity. KNEE DEEP BELGO HOPTOLOGIST 750ml % ABV, 102 IBU, AMERICAN, Double IPA that packs a punch when it comes to hops. The aroma and flavors will give you citrus and pine with a slight malt sweetness that finishes dry. This Belgian Hoptologist is a collaboration Brew with Track 7 Brewing, a Belgian Imperial India Pale Ale brewed with all Belgium Malts, Belgian Yeast, but hopped up with all Pacific Northwest hops West Coast Style. KNEE DEEP SIMTRA 750ml % ABV, 128 IBU, AMERICAN, delivers a punch in the face with its very danky hop aroma derived from Simcoe and Citra hops. Loads of grapefruit aroma hit you right away. 9 STRONG Dubbel, Tripel, Quadrupel, Oh my! What does it all mean!? The name Dubbel is given to ales containing double the amount of malt compared to that of a traditional ale. The same logic is applied to Tripels and Quadrupels. Certain flavor profiles are also characteristic of each given style.these Belgian ales are known for packing a surprising punch that can, after only a couple glasses, leave you feeling like the rest of the world is moving a little too fast. Relax, take a sip, and enjoy. These beers are not for guzzling. I d make a new Christmas beer and think it s fun to experiment with new ingredients and spices so it was natural to try to make a dessert that can be drunk to risalamande, explains the brewer. In the new Ris a la M ale the man behind Mikkeller used all the ingredients of the Danish Christmas dessert: rice, vanilla, sugar, salt, cream / milk and then cherries and almond extract. The result is a slightly tart ale, which must provide the counterpoint to the sweet risalamande-desse 8

12 PORTER & STOUT Much like other styles of beer, this one ranges quite a bit from London Porters to Russian Imperial Stouts. No clear distinction is made between stout and porter, although stouts tend to be slightly more robust, or stout. Stouts got their name from Stout Porter also known as Double Porter or Extra Porter, these beers tend to be rich in mouth feel and can be sweet, dry, bitter, or malty, but one thing is for sure; all are full flavored and dark in color due to their use of dark roasted grain. The New Buffalo was created to commemorate 100th Anniversary of that event. JOHN HENRY 3 LICK SPIKER 330ML % ABV, AMERICAN, imperial stout brew style that has been bourbon oak aged. This beer is brewed with three different dark roasted malts creating chocolate flavors and a dark appearance. 8 WIRED BATCH ml % ABV, KIWI, imperial stout brewed with coffee and aged in oak barriques. Brewed in New Zealand after great reception of their batch 18, that was brewed to commemorate the brewery s 18 month anniversary. That beer did so well they recreated it in their batch 31.
