My hope is you will be able to apply what you learn in this course to your professional and personal life. This class will undoubtedly affect how you think about food, diets and health. We often have complex relationships with food and may approach the topic of nutrition with some bias. I invite you to have an open mind as you explore this dynamic and powerful topic. Cheers, Anna Course Description Biological function and chemical classification of nutrients. Effects of nutritional deficiencies and excesses. Recommended nutrient intakes and the role of diet in the development of chronic disease. Prerequisites: Biology 40 A, B and C (Human Anatomy and Physiology). Advisory: EWRT 1A or ESL5 Student Learning Objectives: 1. Evaluate a meal plan or a diet for meeting the criteria of a healthy diet. 2. Demonstrate a coherent understanding of the relationship between diet and the major chronic diseases. Required Understanding Nutrition by Whitney and Rolfes, 14 th edition Diet Analysis Plus is not needed for this course purchase textbook only. This textbook can be rented from the DeAnza bookstore. 2 ATTENDANCE Logging on to Catalyst substitutes for face-to-face meetings, in part. You should expect to log onto Catalyst several times a week. You must log on to the course within the first 3 days of the course being opened (which is the first day of the quarter--monday). Not doing so is equivalent to not attending the first class meeting of a face-to-face class. Students who have not filled out the short survey and submitted their first, brief post to introduce themselves on Catalyst by 9 am Thursday of the first week of the quarter will be dropped on Thursday afternoon. GRADING PROCEDURE Quizzes (4; 10 points each) 40 points 2 midterm exams* 200 points Forum Discussions (3; 5 pts each) 15 points Diet Assignment 100 points Final Exam 100 points Total Possible Points 455 points *3 midterm exams are given. The lowest midterm exam score is dropped from your cumulative score. None of the quiz scores is dropped. There will be no extra credit points awarded in this class Grading Scale A = % B = % C = % D = % F = <59.0% ONLINE QUIZZES 4 Quizzes will be taken online. Each consists of 10 True/False and Multiple Choice questions. Quiz 1 will cover the material from this Course Syllabus, research methods and nutrition assessment. Quiz 2: carbohydrates and lipids. Quiz 3: protein. Quiz 4: energy balance, obesity and weight loss. None is dropped. The quizzes are open from 8 am Thursday until 8 pm Sunday on the weeks indicated on the green sheet EXAMS Exams are taken in person, not online, on the DeAnza campus. There are no make-up exams--no exceptions. If you miss a midterm exam, that is the one that is dropped. Exam questions are taken from the VLs (virtual lectures), reading assignments from the textbook and from the Forum Discussions. Each of the midterm exams is 50 questions, a mix of true/false and multiple choice questions. You will need a long, narrow Scantron (any color) for each midterm exam plus 2 for the Final Exam WHAT WILL BE ON EACH EXAM? Exam 1 covers the topics: Introduction through (including) Digestion Is an Online Course really right for me? Find out! Go to the Online Education Website and watch the video Introduction to Online Learning Take the survey to assess your online readiness. Exam 2 covers the topics: Carbs, Lipids, Diabetes, Metabolic Syndrome, CVD, Cancer and Phytochemicals Exam 3 covers the topics: Protein and Energy Metabolism The Final Exam is NOT cumulative. It covers the topic Energy Balance through to the end of the course. It is 100 questions and worth 100 points. The final exam is divided into 2 parts: Part 1 covers Energy Balance, Body Composition, Obesity and Weight Management. It is 35 questions. It is closed notes. You will have up to 40 minutes to complete. Part 2 covers Water, Vitamins, Minerals & Dietary Supplements. It is 65 questions. It is open notes. You may not use a laptop. You will have the balance of the 2 hours to complete Both parts of the exam consist of true false and multiple choice questions. You need 2 scantrons for the final exam.

3 WHEN AND WHERE ARE THE EXAMS? Exam 1: Thursday July pm in room MLC 109 (Media Learning Center) Exam 2: Thursday July pm in room MLC 109 Exam 3: Thursday July pm in room MLC 109 Final Exam: Thursday August 4 th 6-8 pm in room MLC 260 If you are truly unable to take the exams at the offered times (try to adjust your schedule to be able to if at all possible) an alternate time will be arranged for earlier on those dates, or the day before, on those Wednesdays in the daytime. OPTIONAL REVIEW SESSIONS There will be review sessions on campus the Wednesday before each exam from 2-3:30 in the area outside my office in SC Attendance is optional. Bring your (completed) Study Guides with you. FORUM DISCUSSIONS For weeks 2-5 there will be 3 or 4 Forum Discussion topics presented. You will pick one of the topics from the selection to submit a post to that discussion, for each 3 of those weeks. Your post is graded, earning up to 5 points. The maximum number of points you can earn for the Forum Discussions is 15, which means 3 posts; therefore one post for each of 3 weeks. They must be posted before the deadline, which is indicated on each of the Forum Discussion Instructions on Catalyst. Although you are welcome to post replies to another student s post, these do not earn points. I will reply to your post and you are, again, welcome to reply to this, but additional posts do not earn points. Only the first post you submit is graded and earns points. Your post is graded, earning up to 5 points. Posts are evaluated on the following 3 criteria: 1. Completeness: 1 point if all questions posed are answered or addressed in your post. 2. Application, Critical Thinking, Accuracy: 3 points if your post applies critical thinking to the topic and/or applies the material covered in the textbook or virtual lecture in a meaningful and accurate way. 3. Professionalism: 1 point if your writing is clear and concise, easy to read, with correct grammar, spelling and punctuation. Your post must be original, adding new ideas to the discussion topic and demonstrating that you have read the discussion thus far, prior to your posting. If you repeat what is written in previous posts you will get 0 points for your post. (If you wait until right before the deadline for that week s forum discussion, it will be more challenging to write an original post. If there is nothing to add to a given forum discussion, read the others there will almost always be one that has not been exhausted) ü A maximum of 3 forum post scores are counted. You can post on all 4 weeks if you wish. If you do, the highest 3 scores will be counted. Posting an additional post does not earn extra credit points. ü Please note that students do not get credit for posting on more than one discussion topic in a given week. Students who do multiple discussion topics will be graded on the first one that I happen to read. ü The discussion topic posts are assigned reading. Information that appears in the posts could be on exams. There is information that appears on the forum discussions that will help you to understand the concepts included in this course.

4 THE DIET ASSIGNMENT This is a quarter-long assignment that is divided into 3 parts, beginning with your keeping a Food Record for 3 days and collecting labels/nutrition information about foods eaten out (Part 1), followed by analyzing the foods on a nutrient analysis program and getting reports with data about your food intake (Part 2), followed by your writing a comprehensive assessment of your diet based on these 3 days (part 3). Instructions for each part will be posted on Catalyst. The assignement all 3 parts--is turned in only once towards the end of the quarter, although Parts 1 and 2 are checked for completion during the quarter to encourage students to stay on task and not procrastinate. If you fail to get Parts 1 and 2 checked off by the deadline, you will lose 5 points for each part (so if you fail to get both parts checked off, you will lose 10 points from your final score; if you fail to get Part 1 OR Part 2, you will lose 5 points). There is no late show. No exceptions. The Assignment must be turned in as a hard copy at the end of the quarter. Clear instructions for how to get your assignment to your instructor will be posted well before it is due. (It could be mailed if coming to campus is a hardship. It cannot be submitted online) The assignment will be accepted late as long as it is turned in/submitted by the time of the Final Exam but it will be marked down 10% for being late (anytime it is turned in after the deadline is considered late). No assignments will be accepted after the Final Exam. If you don t get it to me by then, you will receive a score of 0. This assignment is a big part of your grade, and it requires significant effort and time in order to do well on it. It provides both academic and personal benefits. ACADEMIC DISHONESTY Any student found to be cheating or taking part in any other form of academic dishonesty will receive no points or grade for what they cheated on. Some examples of academic dishonesty include: Copying from someone else's test Purposely allowing another student to copy from your paper during a test Communicating to another student during an exam, looking at another student s exam, looking at any written material other than the exam will all be presumed to be for the purpose of cheating Turning in another person's Diet Assignment (or any part of it), representing it as your own; Copying parts of the Diet Assignment from another person s work Any form of plagiarism; Giving your academic work to another student to plagiarize Lying to an instructor or college official to improve your grade The Office of the Dean of Student Affairs & Activities maintains a record of students who have engaged in academic dishonesty. This information is used to identify and discipline students who have been reported for academic dishonesty more than once. Know This! Student Success in this class requires TIME. Be prepared to spend at least 25 hours a week using and studying the course materials. Remember, you are not sitting in class for nearly 7½ hours a week, which the students in a summer, face-to-face class are, in addition to out-of-class time studying. Time management skills are essential for staying on top of the material. Evaluate your priorities. Do not attempt to take this class if you are stretched too thin this quarter. Be realistic as to what you can accomplish with what time and energy you have to give to this class. There are no shortcuts to learning and mastering skills. Don t underestimate the time needed to do well in this online class. Summer session progresses at double speed: 1 week of summer quarter = 2 weeks during other quarters.

5 OTHER IMPORTANT INFORMATION If you need to receive an A or a B in this class, then put the time and effort into the class to help you to be successful. Do not wait until the end of the quarter to act if it becomes evident that you are not likely to earn the grade that you need or want. Sometimes the process of learning is frustrating and difficult. Oftentimes it is satisfying. Learning requires considerable effort and patience. With appropriate strategies, that effort brings you results: mastering the material. Check out the Student Success Center on campus. They have workshops that can help you improve your testing taking skills, writing, and much, much more. Read the Message to my Students on Catalyst for tips on how to do well in this class. Read the Biology/Chemistry Review on Catalyst, too. You should be comfortable with this material. If not, update your knowledge in those areas. The Biological and Health Sciences Division has a student handbook available at You need to access this handbook as all material contained in the handbook is part of this green sheet and does apply to you as a student in this class. It contains a lot of useful information that will help you to do well in this and other classes. If you are or have ever battled an eating disorder, and this course/the diet assignment has the potential of setting you back in your recovery process, please feel free to discuss your situation with me. Some accommodations are possible. Frequently Asked Questions Q. How do I contact my instructor? A. The quickest way is to me: milleranna@fhda.edu. Be sure to write Bio 45 online in the subject. Q. What happens if I can t come to DeAnza on the days/at the times the exams are given? A. If the times conflict with your work schedule, first, see if you can adjust your schedule for those days only. If there is an impossibility of your coming to campus (not simply an inconvenience), then get in touch with your instructor right away. DeAnza does not have a testing center, but there may be other times you could take the exam. Q. What happens if I miss an exam? A. One midterm exam score is dropped (the lowest of the 3) so that will be the one that is dropped. If something unavoidable prevents you from taking a second exam, contact your instructor before the exam, or in the case of an emergency, as soon as possible after the exam. Q. Do I have to eat a healthy diet to do well in this class? A. Your grade in this class is not at all based on how well you eat. You do not have to change your eating habits while in this class. Many students, however, do find they make some changes in their food choices as a result of things they learn in Biology 45. Q. Can I use an older edition of the textbook? A. It is always ideal to use the current edition, especially in a nutrition class (information changes as research sheds new light on the topics). Students can manage with the edition right before the current one, although this tends to add a little stress to their lives. Earlier editions are not a good idea. Yes, the texbook is expensive. It can be rented on campus. Copies are on reserve at the library.
