1 Title of activity: Sibshop Sundaes A brief description of the activity: It s a dessert! It s a science project! It s way cool fun for kids. This no-cook recipe for vanilla ice cream makes about eight half-cup servings. Type of Activity: Cooking activity Materials needed for this activity: Ingredients: 2 cups heavy whipping cream 2 cups half-and-half cream 1/2 cup white sugar 2 teaspoons vanilla extract 1 bag crushed ice 4 cups coarse salt Other Items You Will Need: Copies of the Sundae Song Towels (for clean up) Mittens or Gloves Pitcher or Mixing Bowl Rubber Spatula Measuring Spoons and Measuring Cup 8 gallon-sized re-sealable bag (freezer bags work best) 16 pint-sized re-sealable bags (freezer bags work best) Bowls or Cups Spoons Favorite Mix-ins to add to ice cream before or after tossing & shaking: Mini Chocolate Chips

2 Blueberries, Peaches, Strawberries Crumbled Cookies Chopped Candy Bars Chopped Chocolate Protein Bars Flavored Syrups Whipped Topping Maraschino Cherries Optimal Setting for this Activity: Outdoor is best (but indoor works, too) Optimal Number of Participants for this Activity: 8 Directions. 1. In a pitcher or large measuring cup, stir together the whipping cream, half-and-half, sugar and vanilla extract until sugar has dissolved. 2. Pour about 1/2 cup of mixture into one of the pint-size plastic bags and seal carefully, squeezing out extra air. Place the sealed bag into a second pint-size bag, again squeezing out extra air. Seal carefully. Repeat this process for the remainder of the mixture. 3. Fill the gallon-size plastic bag about halfway with ice and add 1/2 cup coarse salt. Place the two small sealed bags into one large bag, squeeze out most of the air, and seal the large bag. 4. Wear mittens or thick gloves, or wrap the bag in a towel to protect hands against the extreme cold. Form a circle. Each person shakes a bag for a minimum of 5-10 minutes or until mixture thickens into ice cream. Add more salt and ice to the outer bag if ice cream hasn t formed after 10 minutes of continuous motion. 5. If there are more kids than bags, have the extra kids sing the Sundae Song. If not, the Leader can sing the Sundae Song while the kids shake. Challenge them to learn the song and sing along! 6. Remove the outer pint-size bag before you open the inner bag so you don t get any of the salty ice on your ice cream!

3 Alternative: Coffee Can Ice Cream An alternative to the baggie method is to use coffee cans. The recipe is the same, and may be doubled or tripled because the coffee can can hold more liquid than the baggies. Put the mixture in a standard size coffee can and seal with the plastic lid, then place that can inside a larger economy size can (usually available from the teachers lounge or office). Pack the large can with ice and salt, and seal with the lid. Students can roll the can back and forth on the ground (outside the condensation will drip) until the ice cream is set. The time required to set the mixture will vary depending on the number of servings in the can. Safety Alert This process creates temperatures well below normal freezing;; protect your hands with thick gloves or a towel while shaking the mixture into ice cream. The Science of Salt Salt lowers the freezing point of the ice and creates an extra-cold brine that absorbs heat from the milk mixture, causing the mixture to freeze. What s Shaking? Why shake the bag? The motion creates smoother ice cream by breaking up large ice crystals and allows the ice cream to freeze uniformly. Just For Fun! Who invented ice cream? Legend has it that the Roman emperor, Nero, discovered ice cream. Runners brought snow from the mountains to make the first ice cream. In 1846, Nancy Johnson invented the hand-cranked ice cream churn and ice cream surged in popularity. Then, in 1904, ice cream cones were invented at the St. Louis World Exposition. An ice cream vendor ran out of dishes and improvised by rolling up some waffles to make cones. Brain Freezer A group of children went to Holman s Dairy to buy ice cream cones. Each child bought a double scoop cone with two flavors of ice cream. None of the children chose the same combination of flavors. Holman s Dairy has nine different flavors of ice cream: Vanilla, Maple, Chocolate, Toffee, Raspberry, Strawberry, Jamocha, Nutcracker, and Almond. How many children are there? Source.
