2 Fruit fusion 1 clementine 6 red grapes 6 green grapes 1 kiwi fruit 1 banana 1 apple 2 x 15ml spoons orange juice Knife, chopping board, bowl, measuring spoons, spoon. 1. Peel the clementine and separate into segments. 2. Cut the grapes in half and remove any seeds. 3. Peel the kiwi fruit and slice. 4. Peel the banana and slice. 5. Quarter the apple, remove the core and slice. 6. Place all the fruit in a bowl. 7. Add the orange juice and mix together. Try using different types of fruit such as sliced peaches, chunks of fresh mango or canned pineapple pieces. Use other types of fruit juice instead of orange juice. Cut the fruit into very small, even sized pieces to make a fruit cocktail. Wash the grapes and apple before using them.

3 Pizza Toast 2 slices of bread /Small Baguette chopping board 2X15ml spoons tomato pizza sauce Knife Half a yellow pepper Grater 1 spring onion Fish slice 1 mushroom Teaspoon 30g hard cheese Tablespoon 1. Preheat grill. 2. Slice the pepper, spring onion and mushroom. 3. Grate the cheese. 4. Place the bread under the grill and toast one side. 5. Remove the bread from the grill and place on the chopping board uncooked side-up. 6. Spread the tomato sauce over the bread. 7. Arrange the pepper, mushroom over the slices. 8. Place under the grill until the cheese bubbles.

4 Fruit Flapjacks 75g dried apricots 150g oats 50g sugar 50g butter or margarine 2x15ml spoons golden syrup Chopping board, knife, weighing scales, measuring spoons, saucepan, wooden spoon, spatula, non-stick baking tin, palette knife. 1. Preheat the oven to 180 o C or gas mark Chop the apricots into small pieces. 3. Place the butter or margarine, sugar and syrup into a saucepan and gently heat until the butter or margarine has melted. 4. Stir in the oats and apricots. 5. Pour the mixture into a non-stick (or lined) baking tin. 6. Pat down the mixture in the baking tin. 7. Bake for minutes, until lightly browned. 8. Remove from the oven and cut into bars in the baking tin while hot. - Vary the type of dried fruit used, e.g. sultanas, figs, mixed fruit. - Add 1 x 5ml spoon cinnamon, ginger or mixed spice to the oat mixture.

5 Vegetable Chowder 1 onion 1 carrot 1 leek 1 potato 1 celery stick 1 x 10ml spoon oil 600ml stock (water and stock cube) 1 x 15ml spoon coriander, chopped Chopping board, knife, vegetable peeler, measuring spoons, saucepan, wooden spoon, measuring jug. 1. Peel and chop the onion. 2. Top and tail the carrot, then peel and dice. 3. Top and tail the leek, then slice. 4. Peel and cube the potato. 5. Slice the celery. 6. Heat the oil in a saucepan and fry all the vegetables, except the potatoes, for 5 minutes. 7. Add the stock to the saucepan and bring to the boil. 8. Add the potatoes and simmer for 20 minutes.

6 Mini Carrot Cakes 150g margarine 250g carrots 200g sugar 2 large eggs 200g flour 2 x 5ml cinnamon 2 x 5ml baking powder 125g sultanas 50g nuts Chopping board, knife, vegetable peeler, grater, measuring spoons, weighing scales, small bowl, mixing bowl, wooden spoon, sieve, muffin tray, 12 muffin cases, 2 large metal spoons. 1. Preheat the oven to 200 o C or gas mark Melt the margarine in the microwave. 3. Top and tail, and then peel and grate the carrots. 4. Combine the carrots, sugar and margarine in the mining bowl. 5. Sift in the flour, cinnamon and baking powder. 6. Beat the eggs in a small bowl, and then add to the mixture. 7. Mix in the sultanas and nuts. 8. Divide the mixture equally between the muffin cases, using the two metal spoons. 9. Bake for 20 minutes. When the mini-carrot cakes are cool, you may wish to make a cream cheese topping. Combine 50g cream cheese and 25g icing sugar together.

7 Apple and raisin Crumble 100g plain flour 50g butter or margarine 50g oats 25g sugar 2 eating apples 50g sultanas Weighing scales, mixing bowl, wooden spoon, chopping board, knife, ovenproof dish or foil tray, baking tray. 1. Preheat the oven to 190 C or gas mark Rub in the butter or margarine into the flour until it resembles breadcrumbs. 3. Stir in the oats and sugar. 4. Cut the apples into quarters and remove the core. Slice thinly 5. Sprinkle the crumble topping over the apple slices. 6. Bake for minutes, until the apples are soft and the crumble is golden. Try changing ingredients to different fresh or dried fruit. Try adding nutmeg or cinnamon to the crumble topping.

8 Cheesy scones 250g self raising flour Baking tray lined 1 x 5ml spoon mustard powder Sieve 40g butter or margarine Large bowl 75g hard cheese Grater 125ml semi-skimmed milk Chopping board Palette knife Measuring jug Flour dredger Rolling pin Scone cutter Pastry brush Cooling rack 1. Preheat the oven to 220 C or gas mark Prepare a baking tray, e.g. greased and lined. 3. Sieve the flour and mustard into the bowl. 4. Rub in the butter or margarine into the flour until it resembles breadcrumbs. 5. Grate the cheese. 6. Stir in the cheese. 7. Make a well in the middle of the flour and carefully pour in the milk. (Save just a little of the milk). 8. Mix to form a soft dough. 9. Place the dough on a lightly floured work surface. 10. Roll out the dough to about 1½cm thick. 11. Shape the scones using a cutter. 12. Place the scones on a baking tray and brush each top with a little milk. 13. Bake for minutes, until golden brown. 14. Allow to cool on a cooling rack. To make fruit scones, add 25g sugar and 75g currants or sultanas before the milk and leave out the cheese. Traditionally, fluted scone cutters are used for sweet scones and plain cutters for savoury scones. You could experiment with different flavourings by adding herbs or spices.

9 Vegetable Cous Cous 175ml water, boiling 1 vegetable stock cube 100g couscous 1 medium tomato 1 spring onion ¼ cucumber ½ yellow pepper 4 dried apricots 1 x 15ml spoon parsley 2 x 15ml spoons low fat dressing Kettle, measuring jug, measuring spoons, weighing scales, large bowl, fork, chopping board, sharp knife, can opener, scissors, mixing spoon. 1. Make up the stock by dissolving the stock cube in the boiling water. 2. Pour the stock over the couscous in a large bowl. 3. Fluff with a fork and leave to stand for 5 minutes. 4. Chop the tomato and cucumber into small chunks. 5. Slice the pepper into small strips. 6. Slice the dried apricots and parsley into small pieces. 7. Add all the vegetables to the couscous and snip the spring onions into the bowl using the scissors. 8. Stir everything together. 9. Add the dressing. Vary the vegetables in the couscous dish, e.g. use celery, sweetcorn, peas, olives or mushrooms. Try adding some chickpeas, chopped cooked chicken, ham, tuna or chunks of feta cheese. Use flaked almonds or raisins instead of the dried apricots.

10 Pasta Salad 450g uncooked fusilli (spiral) pasta 60g thinly sliced carrots 2 sticks celery, chopped 75g chopped green pepper 65g cucumber, peeled and thinly sliced 2 large tomatoes, diced 4 tablespoons chopped onion 900ml Italian salad dressing 40g grated Parmesan cheese 1. Cook pasta in large pot of boiling water until al dente. Rinse under cold water and drain. 2. Peel and chop carrots. 3. Wash and slice celery 4. De seed and chop pepper 5. Peel and dice onion 6. Chop tomatoes 7. Mix all the vegetables together in large bowl. 8. Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well. 9. Chill for one hour before serving.

11 Tuna and Broccoli Pasta 1 clove garlic 1 x 15ml spoon oil 2 x 400g canned chopped tomatoes Handful of fresh basil Black pepper Knife, chopping board, garlic press, measuring spoons, saucepan, wooden spoon. 1. Prepare the onion and garlic: Peel and chop the onion; Peel and crush the garlic. 2. Fry the onion and garlic in the oil for 5 minutes, until soft. Peel and crush the garlic. 3. Fry the onion and garlic in the oil for 5 minutes, until soft. 4. Add the tomatoes and tear in the basil leaves. Add a few twists of black pepper, then allow to simmer gently for 30 minutes (longer if possible). You may wish to serve the tomato ragu with pasta if so: after 15 minutes, put a large saucepan of water on to boil. When rapidly boiling, add the pasta and cook for around 10 minutes until al dente. 5. Drain; Mix the cooked pasta and tomato sauce together.
