In fact, the type of cheese is unlimited too: Gouda, Edam, Mozarella, Cheddar, Emmental and many other types of cheese are delivered to the wholesale and food processing industry 90 % of it is exported. Due to the continuous growth in the convenience food market, the demand for this type of cheese product is increasing. For instance, Kaas- Pack s products are used for sandwiches, pizza s and pasta s, sauces, snacks, fast food and other convenience food products. Plant Manager, Mr. Erik Koekoek comments: Last year, our production was more than 7000 tons and we have a yearly growth between 10 and 20 %. Kaas-Pack was able to obtain HACCP certification as well as the ISO Food Safety Management certificate by investing a lot in state-of-the-art means and technology. Mr. Koekoek explains: This shows our customers that we take both food safety and the total manufacturing process very seriously and we always deliver highest quality. Shelf life After arrival the packaging of the cheese is removed and then the cheese is transported to the grate drums and the various cutting machines. Then the product

Furthermore, nearly all products are packaged in a protected environment for an optimum shelf life and maximum processibility. After the products are packed in cartons these are put onto pallets by robots. Afterwards the products are transported to the customer directly, or after a short refrigerated storage. Our ERP system enables us to control every operation optimally, clarifies Koekoek; from purchasing raw materials to shipping. In this way, traceability is guaranteed from beginning to end and a total process lead time of three days can be achieved. Quality control island During the process, several quality checks take place; for instance, they are constantly checking for metal contamination with the use of metal detectors from METTLER TOLEDO Safeline. Besides a visual inspection, the quality of the prepacked products is also measured and registered. For this Kaas-Pack has set up a quality control island based on the METTLER TOLEDO Statistical Quality Control system FreeWeigh.Net, on which the net content and the remainder of oxygen is checked at random. In addition, on this island the packages are tested for leakage. Fixed testing procedures A fixed number of prepackages go through a series of random quality checks at regular intervals. First, the product data is entered with barcode scanners on the METTLER TOLEDO FreeWeigh.Net workstation, after which the packages are weighed on a Weights and Measures approved BBK kg 0.5 g scale. Then leakage tests are performed by means of a PBI-Dansensor leak testing system. 3 In a pressurized environment the PBI dansensor leak detector conducts tests to ensure that the product is packed with the correct content of gas mixture. Since all mentioned equipment is connected to the FreeWeigh.Net system, a compact and efficient quality procedure is achieved for all prepacked products. The information is directly processed. In case the weighed or otherwise determined quality parameters are outside the defined tolerances, the production process can be immediately adjusted, resulting in less over- and underfilling, thus preventing any legal and customer complaints. Integrated into Kaas-Pack s ERP System Finally, the results are automatically stored and analyzed for the Quality Management system of Kaas-Pack and presented in customizable charts and graphs. 5 A galvanized platform for dusty and humid areas The galvanized mild steel platform in combination with the IP68 protected load cells are the basic requirements for use in dusty and humid areas. The special hot galvanized manufacturing process ensures a basic protection against corrosion while the IP68 protection ensures that the load cell is completely dust proof as well as resistant to submersion.
