2 Workshop Chairman Dr. Carlos Martin-Rios It gives me great pleasure to present to you the 2016 Workshop on Strategic Renewal, Adaptation and Innovation, organized by the Hospitality Innovation Network (HIN) at the (HES-SO) and sponsored by the HES-SO (University of Applied Sciences Western ). This workshop is the first one of its kind in the hospitality field that aims at developing a more integrative and comprehensive conversation about the antecedents, characteristics, and output of strategic renewal by means of innovation in hotels, resort, restaurants, recreational, and other hospitality and tourism industries firms. Not surprisingly, hospitality innovation has experienced mounting interest in recent years. One important driver of this trend is the need for continuous sustainable innovation to stay competitive, which might lead hospitality firms to search for and to implement a variety of innovative solutions. I look forward to a successful and fruitful workshop. Pr. Carlos Martin-Rios Dr. Carlos Martin-Rios (PhD Rutgers University) is professor of organizational innovation and talent management systems at the and is the Founding Director of the Hospitality Innovation Network (HIN), a research center that purports to study organizational innovation as a bottom up approach to innovation strategy formulation in knowledge-intensive service firms in general and international hospitality firms in particular. His research aims to understand and predict the factors that determine non-technological innovation (e.g., business model innovation, organizational innovation, and management innovation), inter-firm collaborations and knowledge exchanges, and innovative talent management in knowledge-intensive service firms at large and, in particular, hospitality firms. 3 Keynote Speakers Dr. Cathy Enz Thursday 3rd Cooperative Innovation in A Multi-Partner World In this keynote address, Dr. Enz explores who innovates in hospitality and how both disruptions and the evolution of the industry are changing the types and forms of cooperation needed to survive. She offers insights from her research to highlight some of the ways the industry is adapting to change. Cathy A. Enz is the Lewis G. Schaeneman Jr. Professor of Innovation and Dynamic Management and a full professor in strategy at the School of Hotel Administration at Cornell University. She served as Associate Dean for Industry Research and Affairs and Executive Director of the Center for Hospitality Research from 2000 to Enz has published over one hundred journal articles, book chapters, and four books in the area of strategic management. Her research has been published in a wide variety of prestigious academic and hospitality journals. Besides her teaching at Cornell, Enz also presents numerous executive programs around the world, consults extensively in North America, and serves on the Board of Directors of two privately-owned hotel companies. Fernando Polo Friday 4th Digital Transformation in the Tourism Sector In this keynote address, Mr. Polo analyzes the latest trends in digital transformation in tourism. He offers insights on the creative processes and innovations that are reshaping travel, tourism and the global hospitality industry. Fernando Polo is a partner, co-founder and executive managing director at Territorio Creativo. Founded in 1997, Territorio Creativo is a creative digital transformation consultancy of about 120 people engaged in defining and developing people-centered strategies, innovating through the power of engagement. Mr. Polo is also a lecturer at several business schools (Instituto de Empresa, IESE, EOI) and a regular speaker at local and international seminars and conferences. He is co-author of two best selling management books: Socialholic and Lidertarios. Page 3

There is a feeling shared by many that we are at a crossroads and that technological change is about to happen on a large scale in our industry. It would be our great pleasure to welcome you to our roundtable dedicated to technology where the goal is to exchange on the theme of innovation, and how to stir it, the role of public institutions and public/private partnerships notably. Igor Sekulic (Chair and Discussant) is Senior Lecturer of Business Communication at the, with 20 years of expertise in the entertainment and event industry. His research focuses on social sciences and popular culture. He taught in Nantes University, France, Cesar Ritz Hotel School, as well as in the Washington State University Bachelor in Hospitality Management program in. Mathieu Jaton is the CEO of Montreux Jazz Festival Foundation, Montreux Jazz Artist Foundation and Montreux Jazz International. Founded by Claude Nobs in 1967, over the years the Montreux Jazz has become an unmissable event for music fans all around the world. Having made its reputation with its ambitious programming choices, the Montreux Jazz Festival offers musicians an ideal platform and an intimate setting for the duration of its two weeks. Page 4

5 Eugenio Minvielle is the President and Founder of INNIT International. Eugenio was President and CEO of Unilever North America, Nestle France, Nestle Mexico, Nestle Venezuela and COO of DEMB, a spin off from Sara Lee. Eugenio also previously worked at Procter & Gamble in Spain and Canon in Japan. He founded the Nestle Foundation in France, held key Board Positions in the Retail Industry Leadership Association, Grocery Manufacturers of America, the Personal Care Product Counsel, the Healthy Weight Foundation in the US and is now active on the Board of R&R, Pelican Rouge and Europa Corp. Eugenio received a Bachelor of Business Administration 86- University of North Texas and a MBA in 1991 from Harvard University. Jean-Philippe Lallement is the Managing Director of EPFL Innovation Park Foundation. The EPFL Innovation Park Foundation supports innovation and technology transfer from the Swiss Federal Institute (EPFL) and regional universities. Having completed a Master of Science at the Ecole Polytechnique (Paris), Master of Science attélécom (Paris) and MBA at INSEAD, Jean-Philippe has over 12 years of experience in Start-ups as founder, director, investor and coach, and 15 years of experience in general management and strategy in a multinational IT company. 6 «Sustainable Growth and Innovation in Hospitality» Friday, 10h 12h The objective of this roundtable is to suggest innovative initiatives that would improve the competitive advantage of hospitality firms as competition from new actors, such as the so called sharing economy phenomenon, increases. Hotels, restaurants, leisure, recreation and tourism firms must broaden the scope of innovation to find new and sustainable sources of growth. It would be our great pleasure to welcome you to our roundtable dedicated to hospitality innovation where the goal is to exchange on the theme of strategic renewal, adaptation and success. Dr. Christine Demen-Meier (Chair and Discussant) is Associate Professor and head of the F&B Chair at the École hôtelière de Lausanne (). The aim of the Chair is to study innovation and sustainable development in the food service industry. Dr. Demen-Meier is particularly interested in the possibilities of innovation, new business tools, and different approaches to change management (complete break and new start or gradual implementation of change). In addition, she sits on the Board of Directors of a three star hotel, acts as a consultant for various professional institutes such as the European Institute for Cooperation and Development, and trains start-up designers through various organizations such as the CTI or CRPM. Anne Sophie Pic is a French chef best known for earning three Michelin stars for her restaurant, Maison Pic, in southeast France. She is the fourth female chef to ever win three Michelin stars, and was named the Best Female Chef by The World's 50 Best Restaurants in Her second restaurant, Restaurant Anne-Sophie Pic, is located within the Beau-Rivage Palace hotel (Lausanne, ). It was awarded two Michelin stars in In September 2012, she opened her first Paris-based restaurant, La Dame de Picwhich, which was awarded one Michelin star. Her cooking style is characterized by complex flavor associations. Page 6

7 Alain Kropf is General Manager of Hotel Royal Savoy in Lausanne. Kropf has more than 20 years of experience in the hospitality industry. During his career he has worked at the Montreux Palace, the Beach Rotana Hotel in Abu Dhabi, the Khalidiya Palace Rayhaan by Rotana Hotel in Abu Dhabi, and the Shangri-La Jakarta, Indonesia. Mr. Kropf is a graduate of the Ecole Hôtelière de Lausanne and holds an MBA from University of Warwick (UK). Oscar Herrera is Chief Information Officer at Lopesan Group (Spain). With a background in Computer Engineering (Deusto University) and an Advanced Managerial Degree (Instituto de Empresa), he has worked in several technology consulting firms and different multinational companies. Since 2010 he has led several projects related to digital transformation at Lopesan Hotel Group. In 2014 he started the process of defining, developing and deploying Lopesan s innovation strategy, called "Think in innovation." Frank Lavey is Senior Vice President Global Operations for Hyatt Hotels Corp since October A 17-year Hyatt executive, Lavey has served as SVP Operations for EAME from , area vice president and managing director of Hyatt Regency Resorts Hawaii from , and prior to that was general manager of Hyatt Regency Waikiki Resort and Spa from Lavey has also managed hotels in major city destinations including Hyatt Regency Los Angeles and Hyatt Fisherman's Wharf, San Francisco, preceded by various operational positions with Hyatt since Marie Forestier is GM at Hotel Bon Rivage, in La Tour de Peilz. The Hotel Hostellerie Bon Rivage is a beautiful 3-star hotel with 50 rooms on the shores of Lake Geneva located in the quiet village of La Tour-de-Peilz. Mrs. Forestier is a graduate of the Ecole Hôtelière de Lausanne. Page 7
