FOR ALL HOSPITALITY BASED PROGRAMMES Dear Student JOINING INSTRUCTIONS I am pleased that you have decided to firmly accept the offer of a place on our programme. We look forward to meeting you and hope that you will have an enjoyable and rewarding time studying with us. The purpose of this documentation is to give you information relevant to your attendance on the programme. Please read this carefully. Your programme will commence at 11.00AM on Monday 21 September 2015 at the National Indoor Athletics Centre (NIAC) on the Cyncoed Campus. It will then continue at 10.00AM on Tuesday the 22 September at the Llandaff Campus these are important sessions so please arrive on time. You will be told which room to attend upon your arrival. 1. PROGRAMME STRUCTURE Aims The central aims of the Programmes are to: develop in student a wide ranging and critical understanding of hospitality management and the hospitality industry; produce a graduate with the necessary skills and knowledge so they can make an effective contribution to the management of an organisation upon graduation; lay the foundation for future and continuing professional development; prepare graduates for future management positions within the industry. First Year Modules Hospitality in Practice International Hospitality Operations Principles of Hospitality Finance for Managers Management Theory and Practice Personal Development Planning Business Applications

2. YOUR HOSPITALITY PROGRAMME A Programme is a collection of academically related modules e.g. Hospitality Management. The programmes are part of a modular matrix within the Cardiff School of Management. These programmes are normally studied over the following periods: 1 year period full time or 2 years part time for Certificate HE 3/4 years period full time BA International Hospitality Management (depending on placement period) Awards are composed of modules each worth 10 or 20 credits (final year project = 40 credits) totalling a maximum of 120 credits per level and the level and number of credits determines the programme as follows. Honours Degree 120 credits@ level level level 6 Most core modules are 20 credits whilst options and electives tend to be 10 credits. Each single module consists of 100 hours of student effort as articulated in the Welsh Curriculum and Qualification Framework and Cardiff Metropolitan s policy and is reflected in individual modules. Counselling and Guidance One of the advantages of modular schemes is that they allow considerable flexibility in the choice of programme. However, the complexities of student choice offered in modular schemes require increased academic counselling. You are likely to require guidance to ensure your choice of modules is appropriate, that your programme is balanced and coherent, that your choice is suitable for a particular award and that it reflects an award suitable for your ultimate academic and vocational goals. Guidance will be provided in three main ways: i) Through a modular handbook listing all the available pathways, modular regulations and brief details of all modules; ii) iii) Prior to the commencement of the programme, during the induction period, you will be advised of the names of staff who are able to provide academic counselling to assist you in your choice of modules throughout the programme of study; Through a year tutor.

3. ONLINE ENROLMENT Enrolment is an important process which formally confirms your status as a Student. You can complete the online enrolment process from any computer through our Self Service system. Please note that in order to self enrol your status must be Unconditional Firm (UF); please begin your enrolment process by going to step-by-step guidance is provided. This process is essential in that it will allow you access to your student loan (if applied for), payment of fees, programme information systems and importantly enable you to obtain your Student ID Card. A scheduled time for collection of your student ID card will be given to you during your Induction: Meet Your Tutor session 4. BOOKS We appreciate the financial constraints on students in Higher Education and the purchase of certain textbooks is optional however a range of texts will be extensively used during the first year of the programme. Reference material for all subjects will be given to you throughout the programme. 5. DRESS CODE Hospitality Management is a service industry and as such individual bearing and appearance are vital. The programme requires that students bear this in mind at all times. All students are expected to attend sessions in an appropriate manner, this is especially so for practical sessions in the Food and Beverage areas. Legislation is quite specific and module tutors will ensure that all students adhere to dress codes, i.e. Protective clothing, footwear, length of hair, make-up and jewellery. Students are also advised that they must become familiar with appropriate Health and Safety and Food Safety requirements, as they will be working in potentially hazardous areas with industrial equipment including chefs knives. A list of essential protective clothing, uniform and equipment required for purchase is available here Uniform List. Guidance for ordering and delivery of the clothing and equipment is detailed on the uniform list. This equipment is a requirement of the programme and there is a cost. We will provide time in induction week to order the clothing and equipment. Students should remember that if treated well these items will last a lifetime and be of use to them long after they graduate.

Representatives from local hotels as well as current level two and three students are also available to talk to new students and answer any questions that they may have. An introduction to the Industry s professional body, The Institute of Hospitality, is also provided. It is important for new students to form a group ethos as quickly as possible; to this end team-building activities will also form part of the induction programme.

8. STUDENT HANDBOOK During the Induction Programme, you will be issued with an electronic Student Handbook which includes detailed information relating to all University / programme procedures. You will be required to sign for its receipt. You will need to refer to this handbook throughout the programme and it is essential, therefore, that you keep it in a safe place. 9. DISABILITY During induction week you will have the opportunity to learn of the support available to you through Cardiff Metropolitan s Student Services. Cardiff Metropolitan has a Disability Adviser who is able to provide advice on disability issues. The School s modules have been audited to identify issues relating to various disabilities. Should you experience problems relating to specific modules as you progress through the programme, please let us know so we can deal with them. 10. 9 Hospitality Students 2015 Welcome to Cardiff Metropolitan University as a student in the Department for Hospitality. The uniform information is available here Uniform List. In the first year in particular some of the modules are based on operational food and beverage activities. The most appropriate delivery for these modules is in a practical environment in the schools own restaurant The SA Brains Hospitality Suite. The restaurant has a very good reputation supported by a complimentary article in the Times earlier in the year. As with any restaurant we have to work within the confines of The Food Safety Act 1990, as well as all matters on H ealth and Safety, therefore the uniform is compulsory. Uniform requirements will be arranged for a quick delivery system with our suppliers in induction week, so that all students can start the practical classes in week two of the correctly dressed. For late applicants special arrangements will be made. FAQs (a.k.a.questions we are regularly asked) I have not received a uniform list or I have lost it? Check the list by clicking here Uniform List. All applicants will have the chance to try on uniform in induction week. If I already have some of the uniform and equipment specified can I use it? Yes, as long as it is appropriate. If you bring it with you in induction week we will confirm it is okay. I already have a pair of black shoes, can I use them? As long they will protect the foot in the kitchen and do not have a high heel so they are smart and comfortable in the restaurant. It has to be a shoe designated specifically for this purpose, trainers are not acceptable. I have a black shirt/blouse I use for food service, can I use it. Unfortunately no, we are insistent on all students wearing the same shirt/blouse style as this improves the professional appearance of the food service staff. I am getting worried because I have no experience in the kitchen or the restaurant. This is not a problem, we will teach you the necessary operational skills to pass the modules as well as prepare you for Industrial Work Placement.

Is the restaurant open to the general public? Yes, parents and relatives are welcome although you will need to book, as it is very popular. First year students run the restaurant on a rota basis on Thursday lunch and dinner. If I have my own black trousers will I be able to wear them? Only if it complies with the specifications on the uniform list, as to fabric and professional appearance. As a male student is long hair permitted? Yes, but it will have to be tied back in the restaurant and covered in the kitchen. Will I have to work in the evenings? Only approximately six times during the whole year. Transport is available if the class finishes very late. Will there be a secure area to store the uniform and equipment? When students are working in the practical areas, there are secure lockers and changing room facilities. Andy Roberts Programme Director
