1 THE MULTIPLE SCELROSIS DIET Swank & Dugan Page 1 f 6 It is imprtant that the diet be adhered t strictly, and withut fail. T neglect t d s will result in cntinued activity f the disease and ultimate serius deteriratin Swank & Dugan This is a lw-saturated fat diet: (1 teaspn = 5 grams f fat r il.) 1. Yu will eat NO RED MEAT FOR THE FIRST YEAR. This includes dark meat f chicken and turkey. 2. Fllwing the first year, 3 unces f red meat will be allwed nce per week. The eating f red meat is discuraged except n special ccasins. 3. Any amunts f nnfat dairy is permissible Nn-fat milk, skim milk, buttermilk (withut cream/butter bits), evaprated skim milk, rinsed lw-fat cttage cheese, 99% fat-free cheeses (Cunt Dwn, Sap Sag frm Switzerland, Pt Cheese lk fr these in health fd stres), nnfat ygurt. Dairy prducts cntaining 1% butterfat r mre will be eliminated with exceptin f: 1 serving (1g) f dairy prducts cntaining 1% butterfat. Eliminate Whle milk, cream, butter margarine f any kind, sur cream, ice cream exceeding 1 % butterfat, ice milk, cheese exceeding 1 % butter fat, creamed r partially creamed cttage cheese, imitatin dairy prducts cntaining palm, ccnut, r any hydrgenated il. 4. Eliminate all prcessed fds cntaining saturated fat 5. Daily Fat intake: Less than 15g (3 teaspns) f saturated/animal fat (These are slid at refrigeratr temp): All margarine, butter, shrtening, lard, cca butter, palm il, ccnut il, any hydrgenated (prcessed) ils. grund beef, dark chclate, salmn, eggs, cashews, sybean il etc. Minimum f 20g (4 teaspns) f plyunsaturated fat (ils), and a maximum f 50g (10 teaspns) p/day. These are vegetable and fish ils (liquid at refrigeratr temp): Safflwer il, sunflwer seed il, canla (rapeseed) il, crn il, cttnseed il, sybean il, sesame il, wheat germ il, linseed il, peanut il, live il. The bdy is able t synthesize mst f the fatty acids needed fr grwth but must rely n necessary fd surces fr small amunts f plyunsaturated fatty acids knwn as Essential Fatty Acids. Fats and ils are a cncentrated surce f energy; each gram f fat r il (9 calries per gram) supplies twice as much energy as prtein r carbhydrate (4 calries per gram). On a lw-fat diet, yu may ntice drying f yur skin and hair, and easy fatigability, if yur intake f unsaturated fat (il) per day is limited. Yur lifestyle will dictate the amunt f unsaturated fatty acids necessary in yur diet. If yu are wrking and exercising, yu may need t increase yur il. If yu are sedentary, 4 teaspns (20 grams) per day will usually be sufficient. 6. Eggs D nt reuse il when cking. Always refrigerate il after pening t avid rancidity (except live il). Keep live il in a cl, dark place (d nt refrigerate). D nt heat il t the smking pint. Cunt il used in cking in yur daily il allwance. Three (3) teaspns f il = ne (1) tablespn. Sixteen (16) tablespns f il = ne (1) cup. If an il cluds r hardens at refrigeratr temperature, d nt use. (Olive il is the exceptin t this rule.) The white f the egg cntains n fat. The ylk cntains 5 grams f mstly saturated fat. Yu are allwed three eggs per week, but n mre than ne per day. One cmplete egg = 5 grams f saturated fat. 7. Grains & Cereals Use whle-grain prducts as much as pssible. All bread prducts are permissible. The natural grains prvide bulk in the diet and aid in eliminatin. Althugh these prducts may cntain a small amunt f saturated fat, it has been accunted fr in the bdy f the diet. Avid items such as muffins cntaining an undesirable il, pastry, cakes, pies r any ther prduct made with hydrgenated palm r ccnut il, lard, butter, margarine, shrtening r vegetable il that is nt defined. Cld and ht cereals are permissible n the diet. Chse frm nes with the least amunt f saturated fat. (Cheeris, shredded wheat, Wheaties, puffed rice and Grape Nuts are almst fat-free and less expensive. Crackers Snack crackers cntaining n shrtening, butter, margarine r prcessed ils are permissible. Rye-Krisp, melba tast, matz bread, nn-fat saltines, fat-free graham crackers and nn-fat trtilla chips are acceptable snacks. Avid all cmmercially prepared chips and fancy crackers. 10. Cmmerically prepared fd Any bxed r canned fd cntaining prcessed il (hydrgenated), shrtening r butter and exceeding 1 gram f saturated fat per serving is t be avided. Sme acceptable prducts are available. Read labels and be sure t check serving size. 11. Cndiments With the exceptin f maynnaise, cndiments such as mustard, catsup, relish, barbeque sauces, tac sauces, sweet & sur sauces, herbs and spices are permissible in any amunt. Maynnaise cntains unsaturated fatty acids (il) and must be cunted in yur daily il alltment. 2 tsp. maynnaise r salad dressing, cmmercial = 1 tsp. il 1 tsp. maynnaise, hmemade = 1 tsp. il 1 Tbsp. "fat-free" maynnaise = 1 tsp. il Fat-free salad dressings = zer (0) fat and il 12. Beverages Caffeine-cntaining prducts increase nervusness and insmnia, as well as frequency and urgency t urinate. Therefre, it is necessary t limit these beverages t a maximum f 3 cups daily (can be cmbined). If an increase in symptms ccurs, d nt cnsume caffeine. Example: 1 cup cffee + 1 cup tea + 1 cup cla = 3 cups daily ttal. 3 cups cffee r 3 cups tea r 3 cups cla = 3 cups daily ttal. In whatever way yu decide t cmbine yur caffeine, the daily amunt must nt exceed 3 cups. Alchl. Mst patients tend t be sensitive t alchlic beverages. Cmmercial nut butters that are nt hydrgenated r that yu grind yurself at the health fd stre, als cntain gd surces f il. Daily snacks f these fds help t maintain a gd energy level. The fllwing list is t be used t cunt yur daily intake f il: 14. Fruits 15. Vegetables 16. Pultry 2 tsp. peanut butter r ther nut butters (ld-fashined, nn-hydrgenated) = 1 tsp. il 1/2 z. (abut 10) peanuts, almnds r cashews = 1 tsp. il 1/3 z. (abut 10) any ther kind f nuts (walnut and pecan halves, filberts, hazelnuts) = 1 tsp. il 3 tsp. sunflwer seeds = 1 tsp. il 3 tsp. pumpkin kernels = 1 tsp. il 1/3 z. Energy Snack Mix = 1 tsp. il (mix tgether almnds, walnuts, hazelnuts, pumpkin seeds, sunflwer seeds and sesame seeds) Recmmended amunt is 2 fruits daily. All fresh fruits are permissible in any amunt. Frzen fruits can be used, as well as canned, but are nt recmmended. The fllwing fruits cntain unsaturated fatty acids and must be cunted in the daily OIL alltment: Avcads (1/8 = 1tsp = 5g) Olives 3 medium black = 1tsp = 5g 6 medium green = 1tsp = 5g Recmmended amunt is 2 cups daily. Vegetable prvide the bdy with vitamins and minerals and are rich in essential fatty acids. Yu are encuraged t include a variety f vegetables in yur daily diet. Skinned, trimmed white chicken r turkey is permissible Avid prcessed meat, eg. Grund turkey/chicken, lunchen meats, and canned meat. 17. Fish All White fish is permissible in any amunt: Cd, abalne, halibut, snapper, smelt, flunder, sle, sturgen, tuna canned in water, shark, mahi mahi, haddck, perch, Pllack, etc. All shellfish is permissible in any amunt. Of the fllwing lw-fat meats, 3 z = 1 tsp saturated fat. Yu are allwed 3 unces (weighed after cking) fllwing the first year: Leg f lamb, liver (chicken, turkey, beef, calf, prk), Kidney (prk, veal, lamb), Heart (calf, beef lean prtin nly), tngue (calf nly), rabbit, venisn, Elk, Gizzard (chicken) 2 z f the fllwing medium-fat meats = 1tsp f saturated fat. Yu are allwed 3 z fllwing the first year: Beef (lean nly), Ham (lean nly), Lamb (rib, lin, shulder), Prk (lean nly), Veal, Chicken & Turkey (dark meat, n skin), Pheasant (n skin), Heart (lamb, chicken, turkey), Kidney (beef), Tngue (beef), Gizzard (Turkey) supplies recipe ideas and a frum fr patients Supplements that yu will take: Std Prcess Tuna Omega 3 il capsules. In the past few years, research demnstrates that vitamin D deficiency increases the risk f MS whereas intake f vitamin D is assciated with a lwer incidence f MS. Vitamin D deficiency is nw recgnized as an epidemic in the United States, especially fr in areas with limited sun expsure (the nrthern half f the US) and thse wh spend mst f their time indrs.
