Discuss the pros and cons in determining whether your school should be a nut-free zone. 4 hours Nutrition for SNA Food Distribution Program 101 Maximizing the Value of Your Entitlement Group A?Group B? Processed food? Fresh produce? How to get the most bang for your entitlement bucks. 1/ 2 hour Commodities 101 Staff from the Colorado Food Distribution Program will discuss the basics of the commodity program. Bring any questions you may have regarding the commodity food program. 1 hour (3 CEUs) Commodity Processing 101 Schools have the right to divert some of their USDA commodities to 3 rd - party processors. The school pays the processor a fee for adding value to the food. For example, raw chicken can be processed into chicken patties or chicken nuggets. Learn more about commodity processing in this session. 1 hour Commodity Food Recall/Hold Process - Get vital information on the USDA commodity food hold and recall process. Learn how to register as a food recall contact for your agency. Learn the process of registering a USDA commodity food complaint. 1/2 hour. Wellness and You Is wellness important to you? Achieve the power of visioning and setting SMART goals; how to keep going when things get tough; and measuring and monitoring your goals. Create your road map to wellness! 1 hour CEU for SNA First Choice Purchasing System This course provides child nutrition program administrators with a resource to guide them in their procurement procedures. In addition, procurement information integrates food safety information to assist the purchaser in establishing procedures to assure the receipt of a safe product. 18 hours Administration for SNA Fuel Up to Play 60- Western Dairy Assoc and Denver Broncos Partnership The National Dairy Council and our Western Dairy Association have huddled up with the National Football League to help students eat right and stay active with Fuel Up to Play 60. Schools using the student-led Fuel Up to Play 60 program can help inspire kids to "get up and play" for 60 minutes a day and to "fuel up" with the nutrient rich foods kids don't get enough of such as low-fat and fat-free dairy foods, fruits, vegetables and whole grains. 1.5 hours for (This does not need to be highlighted can t get rid of it!) Cooperative Purchasing Opportunities for School Districts Joining a purchasing cooperative is an important step in decreasing food costs. Don t miss this opportunity to learn about your options in Colorado. 2 hours Administration for SNA The New HealthierUS School Challenge Guidelines and Rewards The objective of this challenge is to recognize schools that take specific steps to improve their programs and address obesity. Material covered will include the basic requirements and criteria of the challenge. This is a great way to implement components of the district s wellness policy and get recognition and money for the school or school district s efforts. If your district would like to go for the bronze, silver, or gold award of distinction and be one of the first in Colorado, attending this session is the place to start! 1 hour CEU for
2 USDA Food Buying Guide Learn how to use this essential tool for managers who purchase food and/or plan menus for quantity food preparation. Note: REQUIRED if you are also taking the New Manager Training class. This course was developed by NFSMI. 8 hours Administration for SNA Are You Ready for the IOM s Recommended Changes to School Meals? Come find out what changes the Institute of Medicine is recommending for school meals. Learn how USDA will propose changes to the meal patterns and nutrition standards based on these recommendations. 1 hour CEU for SNA On the Road to Professional Food Preparation This Breakfast Lunch Training (BLT) resource focuses on basic skills needed to produce high quality foods for your child nutrition program. Learn how to use this tool designed for the food service manager to train new employees and/or as a review for other employees. 1 hour CEU for SNA Serving It Safe, 2 nd Edition Update This course includes information based on the 2001 Food Code, describes why food safety is important, and gives general guidance on how foodservice personnel can ensure that foods are prepared and served in a safe manner. Participants who are managers may bring their district s copy of the Serving It Safe, 2 nd Edition manual update. 10 hours Safety and Sanitation for SNA Healthy Edge: Building Healthy School Meals This two-day workshop focuses on nutrition education and assists all school foodservice professionals with offering healthy, appealing meals that satisfy children s dietary needs. 10 hours Nutrition for SNA Focus on the Customer Bring your students back day after day with great meals and great customer service. This course from NFSMI is about building a customer-focused school nutrition program that will do just that. Group activities will help you develop your skills as a customer service team leader. Learn how to determine what your customers want and how to give it to them. 10 hours Communications/ Marketing for SNA Management Skills for Success Developed by the National Food Service Management Institute (NFSMI), this course covers the following topics: Communication Skills for Managers, Creating a Motivating Workplace, Dealing with Conflict in the Workplace, Dealing with Difficult People and Situations,
3 Delegating and Empowering, Employee Discipline, and Performance Standards and Expectations. 12 hours Administration for SNA Achieving an Effective Foodservice System This National Food Service Management Institute (NFSMI) course prepares you for: Crisis Management Procedure and Practice, Developing Team Goals, Finding the Best, Getting the Most from Your Workday, Jobs and Multi-skilling in the Food System, Orientation and Retraining, Scheduling the Team, and Strategies for an Effective Work Environment. 11½ hours Administration for SNA Leadership Development for Managers This National Food Service Management Institute (NFSMI) course highlights the following topics: Adult Learning Principles, Balance and Personal Development, Building an Effective Team, Coaching Employees for a Positive Outcome, Effective Leadership and Management Styles, Managing Change in Changing Times, and the Value of Valuing Differences in the Workplace. 13 hours Administration for SNA Dealing with Conflict & Curing Negativity in the Workplace Most of us are less skilled at handling conflict than we should be. This class will teach negotiating behavior by encouraging conflicting parties to shift to a more collaborative style in order to find and pursue shared interests, creating a win/win outcome. 5 hours Communications/Marketing for SNA Creating and Maintaining a HACCP Plan If you are a new manager or director and do not feel completely comfortable with the implementation or maintenance of the district HACCP plan, this class is a must. You will also learn about resources available for on-going employee food safety training. 5 hours Safety and Sanitation for SNA Creating Cycle Menus and Meeting the HealthierUS Challenge Simplify your job. Class participants will develop a cycle menu that will: 1) maximize the use of commodities, 2) simplify menu worksheets, 3) feature student preferred entrees, 4) follow USDA guidelines for meeting nutrient standards and the HealthierUS School Challenge, and 5) allow for student choice menus, field trips, holiday and seasonal menus, and produce deliveries. All school districts are encouraged to create cycle menus as a cost saving measure. You should also take this course if you are up for a CDE review in the school year. 5 hours Administration for SNA Healthy Lifestyles Training This class will help you understand five key recommendations of the 2005 Dietary Guidelines and think about ways to put them into action for yourself and the children you serve. Dress comfortably as physical activities will be included throughout the day. 5 hours Nutrition for SNA Mixing Four Generations in the Workplace We will define the four generations in the workplace and teach you how to deal with each one. Generation conflicts cost millions in productivity and affect motivation and morale. 6 hours Communications/Marketing for SNA Intermediate Excel Participants must have previous knowledge of and experience with Excel. Students work on individual computers and learn to: create and modify charts and tables, work with graphic objects, sort and filter data, merge cells, use page breaks, and create advanced formulas. Students will also learn how to import data for direct and create a spreadsheet to record and cost out food and non-food inventories. 6 hours Administration for SNA Colorado Trends and Ideas to Increase Participation This class is offered in three separate sessions to accommodate small, medium and large districts. Small districts will have 1-10 schools, medium districts will have schools, and large will have 26+ schools. Participants will learn what the most recent trends in Colorado schools are and what districts are doing to increase breakfast and lunch participation. 5 hours Operations for SNA Personal Safety in the Workplace This course is a combination of the following topics: Evade & Escape Training, Preventing Workplace Violence, Dealing with Bullies, Customer Service, and Recognizing Sexual Harassment on the Job. 6 hours Operations for SNA
4 Baking Whole Wheat Foods that Kids Love This is a hands-on baking class in which a certified pastry chef will introduce you to whole wheat cookies, pizza crust, and desserts to entice your student customers and increase fiber & nutrients in your menus. You will prepare and eat your lunch in this session. Class size is limited. 6 hours Operations for SNA CPR & First Aid Participants will be trained in cardiopulmonary resuscitation and rescue breathing for infants, children, and adults. Completion of this class will qualify participants for by The American Red Cross. Class size is limited. 6 hours Operations for SNA Homemade & Healthy School Meals This is a hands-on cooking class taught by a Culinary Institute of America certified chef. If you are following the trend to decrease processed foods offered, this is for you! Plan on preparing and eating lunch during this class. Class size is limited. 6 hours Operations for SNA Free and Reduced Price Process and Verification This session is for those responsible for the approval/processing of free and reduced price meal applications and the income verification process. Annual training on this subject is mandatory, and you may count this as your school year training. This session will also be offered later this summer at no cost. 6 hours Operations for SNA New Manager Training Are you a new manager or interested in becoming a manager? This course will take you through point-of-service requirements, menu worksheets/production records, offer vs. serve provision and HACCP basics. You MUST also take the USDA Food Buying Guide class on Monday afternoon. 6 hours Administration for SNA Students with Special Needs Schools participating in the Child Nutrition Programs are required to accommodate the dietary needs of students with physical disabilities including swallowing problems, diabetes, and life-threatening allergies. Learn about diabetic diets, modifications in food consistency, and dealing with allergies from a registered dietitian who works with special needs students and their schools. 5 hours Nutrition for SNA School Breakfast Program Learn the basics of operating a school breakfast program, including meal pattern requirements, recordkeeping and how to recognize a reimbursable meal. 1 hour CEU for SNA Afterschool Snack Program Learn or review the basics and requirements of the Afterschool Care Snack Program, including what types of programs qualify and what food is/is not acceptable for snacks. Sample district on-site review forms and menus will be provided. 1 hour CEU for SNA
5 Direct Certification This is the first 2010 training for assistance in completing the mandatory direct process for the school year. 1 hour CEU for SNA Online Claim System If you are responsible for completing the monthly claim for reimbursement from the CDE Nutrition Unit, you should be familiar with the online claim system. 1 hour CEU for SNA
