Introduction to the course This course will enable students to better understand the role of nutrition and energy metabolism as it relates to normal and disease specific physiology. The focus is on the advanced study of macronutrients and micronutrients in humans. Includes advanced study of energy metabolism and the relationship of these dietary components to health and disease. Pre-requisite: BIO 126. Teaching strategies Teaching strategies in this course are varied in order to assist the student in the mastery of this content. Self-directed study, Blackboard discussion, written assignments, audiovisuals, independent research, and team projects will be the primary teaching strategies used to stimulate thought and facilitate learning relative to the course and program objectives. Student Learning Objectives Students in this class will be challenged to: 1. Describe normal metabolism of carbohydrates, proteins, lipids, and micronutrients. 2. Discuss the influence of diet and disease on the metabolism of macronutrients and micronutrients. 3. Interpret and evaluate professional journal articles related to food and nutrition interventions. 4. Develop skills for scholarly endeavors, problem solving and research. 5. Develop and enhance writing related to experiences and issues in health care using the APA format (American Psychological Association). Final Exam Information The final examination will occur during the examination period designated by the Academic Calendar. Course Requirements and Policies Pre-requisites and co-requisites Attendance Weekly attendance is mandatory in this online course. Students are expected to log into their Blackboard site at least twice a week to participate in discussion board and complete weekly assignments. At the instructor s discretion, any student missing more than one week of classes, due to not logging into Blackboard may be dropped from the course, assigned a grade of F, or assigned work to make-up what was missed. More than one week of missed classes may result in a lower final grade. Students who miss should the instructor. Any homework that is missed (i.e. Blackboard post, assignments, etc.) should be submitted at a time agreed upon with the instructor. Communication All communication between students and instructors shall occur via NKU and assigned student accounts. If students opt to have forwarded to a non- NKU account, faculty will not assume responsibility for correspondence that is not received. 3 When sending communication to the instructor, students should format the subject line of the as follows: HSC X (X representing the section number), the nature of the question/subject, your last name. sent with a subject line different than that shown above may be returned or not received by the professor. You should send a copy of s/assignments to yourself as well as to the professor. If you receive a copy, it is highly probable that the professor received your message as well. All correspondence is expected to be professional and courteous. Faculty will make every attempt to respond to students phone calls within 2 business days and s will be promptly responded within 24 hours on the next business day. Engagement Active engagement in the course is essential since the learning goals of analysis & interpretation require engagement by all learners. To actively participate, students should be prepared to post about the week s assignments and assigned readings with critical comments and questions on the discussion board. An overall learning goal of this course is to get students actively and creatively involved in their own learning, and this requires preparation time as well as courage to speak up about a wide array of questions and issues in class conversations. Credit Hour Policy Statement In accordance with federal policy, NKU defines a credit hour as the amount of work represented in the achievement of student learning outcomes (verified by evidence of student achievement) that reasonably approximates one hour (50 minutes) of classroom instruction and a minimum of two hours of out-of-class student work. For every course credit hour, a typical student should expect to spend at least three hours per week of concentrated attention on course-related work including, but not limited to, class meeting time, reading, reviewing, organizing notes, studying and completing assignments. At least an equivalent amount of time is expected for other academic activities such as online courses, laboratory work, internships, practica, studio work and other academic work leading to the award of credit hours. Since this is a 3-hour class, students should expect to spend about 9 hours of out-of-class work each week. If the workload consistently exceeds this, students should discuss the situation with the instructor. If you are consistently putting less than 9 hours in per week, you may not receive the full benefit of the course which may be reflected in your final grade. 4 Faculty members reserve the right to change scheduled content or assignments for reasons they deem appropriate to facilitating the objectives of the course. Course and Resource Materials Course and resource materials are generally available online or in journals accessible to students. Steely Library offers a convenient service of providing direct access to many full text articles online. If an article is not available, Steely will request the article through the Interlibrary Loan system, and forward an electronic copy to you via (usually within 2-3 days). Only materials from peer reviewed journals and reputable professional web sites should be utilized as references. Student Evaluation of Course Northern Kentucky University takes Instructor and Course Evaluations very seriously as an important means of gathering information for the enhancement of learning opportunities for its students. It is an important responsibility of NKU students as citizens of the University to participate in the instructor and course evaluation process. During the two weeks* prior to the end of each semester classes, you will be asked to reflect upon what you have learned in this course, the extent to which you have invested the necessary effort to maximize your learning, and the role your instructor has played in the learning process. Evaluations without comments are less valuable and less credible than those filled out thoughtfully. Comments that are expressed well are more effective than those that are not. Positive feedback is just as important as criticism. Moreover, negative evaluations without any explanation abd specifics are not especially useful. Once grades are submitted, all evaluations are read not only by the instructor, but also by the instructor s department chairperson. Evaluations not only provide feedback to your instructor, but also provide information to the department chair for use in performance evaluations. When instructed to submit work via , all assignments, papers, and projects must have HSC X and your name in the subject line to route it correctly. Any files sent must have your name within the file name to allow for appropriate routing. Policy for late papers: All papers are due on the due date at the given time of day. 6 on time; late examinations will not be accepted and will receive a grade of "F. Of course, exceptions for legitimate and documented medical emergencies may be made. "Engagement" refers to the extent of your active involvement in your own and others learning in the class. It refers to the extent to which you take the learning of the material seriously and involve yourself in the process of learning it. a) Blackboard Discussion: It is expected that students will check into the course site numerous times throughout the week to participate in discussions and complete assignments. Checking into the course once or twice to make all postings for the week is not acceptable as it prohibits meaningful class dialogue and the learning community environment necessary for this course. Blackboard postings on our Discussion Board are required every week. In response to a question posted by the instructor, students are to post responses to the instructor. Attempt to keep initial posts to 250 words or less, focus on quality, not quantity in the initial post. The initial response must be posted no later than 11:59 PM on Wednesday. After the initial post students are expected to respond to other students in a thoughtful and professional manner, with all postings to be completed by 11:59 PM on Friday. Students are required to respond to at least 2 other postings to reflect discussion based on your peers postings (total of 3 postings). Except for Week 1 or if told otherwise, if you are stating factual information you are required to support your statement with a reference to reflect your research. 7 By posting the minimum, you can expect your grade to reflect the minimum effort. A rubric will guide your postings and will be available online. All postings should be done during the week, with a firm deadline on due date. Postings made after the due date will not be accepted. You will not receive credit for your initial posting if made after 11:59 PM Wednesdays. Remember the DB will be graded, but a grade may not be posted weekly. The instructor, at her discretion, will participate in the discussions as needed. Some of the characteristics of effective Discussion Board participation are: High quality postings do the following: 1) they address the question or prompt showing genuine reflection; 2) they incorporate insights from readings, class lectures and discussions; 3) there is a willingness to test new ideas rather than offer only cautious or "safe" comments. Students interact with other class members by asking questions or challenging conclusions; 4) they are conversational in nature, in that they incorporate ideas or questions that some other students have already raised in previous postings on this topic. 2. Quizzes (14% of final grade) Ten quizzes will be completed over the semester. Each week when a quiz is available students will be tested over the content material designed for that week. Quizzes are posted by Monday of each week and are due for submission by Friday at 11:59 pm. Late submissions for quizzes will not be accepted, unless previous arrangements have been made with the instructor or there are extenuating circumstances. Exams (40% of final grade) Exams will be based on lecture/discussion board, notes/assignments, research article, and textbook readings. The exams are closed book and notes or other devices not authorized by the instructor are not allowed. Each student should complete the exams on the date scheduled. Consideration for make-up exams will only be given due to special circumstances (lengthy illness, death in the family, etc.) with advance notice and appropriate documentation. Make-up exams may vary in form, content and degree of difficulty from the original exam. Students missing an exam without a valid excuse and prior permission from the instructor will receive a zero for that exam. 4. Group Project (14% of final grade) 5. Even if you ve not begun your writing, they can help you clarify your thoughts and develop your writing. I highly recommend this service: SCHEDULED BLACKBOARD QUIZZES & ASSIGNMENTS Assignments and assessments are scheduled and accessed using the NKU Blackboard system It is the student s responsibility to monitor the announcement section of Blackboard for notifications and updates. The week begins on Monday and ends on Sunday at 11 PM EST. Assignments/Exercises/Projects/Papers Students will be given different group and individual assignments throughout the semester to enhance learning. 12 Essential Components of This Class This course is a web based equivalent of the traditional classroom format. The material and content will be comparable to that experienced in a face-to-face format, consistent with the needs of online students. Learning Management System This class will be using Blackboard as the learning platform as well as the Evolve website for the text. The platform provides the faculty information, schedule of assignments, clear links to learning resources and access to grade book. Blackboard provides a tutorial at Technical problems with Blackboard should be addressed to the NKU help desk at Technology Needed to Participate in Program In order to take online courses, students must have three primary technical resources: computer hardware, computer software, and Internet access. Either an IBM compatible PC or a Macintosh type computer is acceptable. Recommended minimum configurations will allow students adequate memory, speed, and peripherals to accomplish course tasks. PC and/or Macintosh Minimum Configurations PC Macintosh Pentium 200 MHz or equivalent G3 233 PowerPc Windows 95 or later. 14 Internet Interactions Students are required to exercise a basic respect for one another in all communications. One way to express respect is to attend to netiquette. Netiquette refers to etiquette for the Internet. The following link is a good source of information on Netiquette: Taking a course that uses the Internet, while similar to face-to-face classes, also has some unique features. This different environment requires some new principles. Students are relatively protected by their password, but no one can guarantee privacy online. Part of the privacy for every student depends on the actions of each individual student. This course software enables the instructor to know who has logged into the course, where in the course site they have visited, and how long they have stayed. The Technology Support people have access to information posted at this site. Online communications are s, chat rooms, virtual classrooms, attachments, links, virtual chats and instant messages. For course security, in the event a public terminal (hotel or library) is utilized, completely close the browser software when you are finished. This will prevent another person from accessing the course through your identification, doing mischief in your name and violating the privacy of other students. Access to the course by those not registered in the course is strictly prohibited. Students must represent themselves truthfully at all times in this course. Falsifying identity during internet communications is grounds for disciplinary action of all parties involved. Students are cautioned not to use language that includes: Harassing language Threatening language Discriminatory language Language that violates copyrighted material Disruptive or rude communications: Violators will be asked to leave the session and must obtain the instructor s permission to return to the next session. Obscene pictures or jokes Linking to adult sites Sending offensive Insulting anyone Insulting anyone s ideas or thoughts (disagreement is alright, insulting is not). Hints for Success in This Course Ask questions if you do not understand something! Since technology is not perfect, if you do not get a response from the instructor, be persistent. There are times when you may send an , but I may not receive it. Keep trying or try another method of communication. Try to maintain a regular schedule for doing coursework. Face-to-face courses force you to spend a given amount of time in class. By setting and keeping a schedule, you are doing the same thing. It is possible for the instructor to see how much time you have spent online. Interact with the instructor and other students. The instructor is available via Blackboard, , phone, or a face-to-face scheduled appointment. You have access to other students in the class via class, , and discussion board. 15 Monitor the Home Page regularly to watch for due dates and announcements. Participate in the discussion forums. This is equivalent to a discussion in a face-to-face class. There is no right or wrong answers, we want to hear you! Work in an area where you will not be interrupted. Let your family, roommates, and colleagues know that you are in class and cannot be disturbed. When contacting the instructor, please put the course ID (HSC X) in the subject line along with your last name. This allows the instructor to respond appropriately and timely. Also, always copy the to yourself; if you receive it, there is a good chance that the instructor received it as well. Submit assignments on time and pay particular attention to the late assignment policy. Keep in mind that all course-related is kept in a file along with my responses. Discussion forums are also archived. This protects the student and the instructor. The University provides tutorial and writing assistance, without charge, to any student needing help with course work. This service is located in the Learning Assistance Center (LAC) Room 170 of the University Center. Students are encouraged to seek help as soon as difficulty with the course is encountered. If your assignment grades are not as good as you wanted or expected, make an appointment to conference with me right away. Do not wait until the end of the semester to ask for help do it early. Occasionally, students may experience personal problems or difficulties during the term that can be emotionally disturbing and may seriously interfere with learning.
