1 FOOD SERVICES DEPARTMENT Violations for Schools THE SCHOOL DISTRICT OF PHILADELPHIA SCHOOL REFORM COMMISSION EDUCATION CENTER 440 NORTH BROAD STREET PHILADELPHIA, PENNSYLVANIA Inspection Date: 10/27/2008 Receive Date: 11/3/2008 Account: /27/2008 All equipment shall be designed, installed and operated in accordance with the sanitation criteria set forth by the National Sanitation Foundation, National Automatic Merchandising Association, Baking Industry Sanitation Standards Committee, the Committee for 3-A Sanitary Standards for Dairy Equipment, Commercial Refrigeration Manufacturers Association or equivalent nationally recognized testing laboratory or agency, and minimum design standards as approved by this Department. Food equipment in use does not meet design minimum design standards Residential cabinetry/hand sink, milk crates used as dunnage racks /27/2008 The floors in all rooms in which food or drink is stored, prepared, or handled, and where utensils are washed shall be constructed so as to be easily cleanable, free of open holes or cracks, and maintained in good repair. Janitorial and custodial areas, employee dressing and locker areas, as well as all toilet and lavatory areas shall also meet these requirements. Floors shall be kept clean by dustless methods. Floor is not in good repair in itchen due to damaged/missing tiles The juncture between the floor and wall shall be sealed and coved. Wall/floor junctures are not coved, where needed throughout establisment /27/2008 The walls and ceilings of all rooms shall be kept clean and in good repair. The walls and ceilings of rooms in which food is stored, prepared, or where utensils are washed shall be smooth, constructed of washable material, and finished in a color that will not conceal the presence of soil or dirt. The establishment shall be so constructed as to prevent the entrance of insects and rodents. Effective measures shall be taken to protect against the entrance or breeding of insects or rodents in the establishment premises. Outside openings shall be effectively protected against the entrance of insects and rodents by tight-fitting doors, closed windows, screening, controlled air currents, self-closing mechanisms or other approved means. Proper storage of cleaning equip./supplies is not proviided. Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that can contaminate food when the container is opened. Domestic type cabinetry observed in kitchen. Ceiling tile observed not in good repair. Leak observed in kitchen, not over food prep area.
