6 Life is good SHORT HISTORY LESSON A land occupied since prehistoric times. Between the 3rd century BC and the 1st century A.D.: Ligurians on the hills of Baou Redon. Carsicis Portus was a port which lived mainly from fishing and trade with the Mediterranean. From the 5th to the 10th centuries: its inhabitants took refuge on the hilltops (castrum) to escape the barbarian invasions. In the 15th century: Cassis became part of the lands belonging to the Count of Provence. It became French in The town was governed by bishops until In the 18th century: the town expanded around the harbour. The smallest and most intimate of the three Calanques boasts a profusion of Aleppo pines that grow directly out of the rock face. It has a tiny, gently sloping, cove. 12 All you need to know about Calanques national Park THE CALANQUES WERE FORMED 120 MILLION YEARS AGO Calanques flora and fauna: an extraordinary treasure... The Massif des Calanques, to the west of Cassis, is composed of a 400 m thick layer of white limestone. Marine valleys have been carved out of it, creating veritable miniature fjords, often with their own magnificent natural coves. DID YOU KNOW At every bend in the pathway you will see typical cliff and garrigue plants: sea lavender (limonium), myrtle, wild asparagus, broom, lavatera and Mediterranean aromatic plants. There is also a profusion of wildlife. If you're lucky, you might see warblers, peregrines, gannets, gulls, a pair of Bonelli Eagles (only 32 in France). ALEPPO PINES They have grown in the Calanques for the last 150 years. SEAGULL Known as gabian in Provence. ASTRALAGUS MASSILIENSIS Also known as mother-in-law's cushion. HIGHLIGHT: COSQUER CAVE (GROTTE COSQUER) Cosquer Cave was discovered in 1991 by Henri Cosquer, a former diver from Cassis... It is an underground wonderland with prehistoric paintings from between 20,000 and 12,000 years before Christ and boasts carvings and paintings of hands, horses, seabirds For safety reasons, the cave is closed to the public. The Calanques have provided an abundant source of the magnificent Cassis stone, for which this tiny fishing port is known throughout the world, as it has been used to construct Mediterranean ports (Alexandria, Algiers, Piraeus, Marseille...). Today it is used to make decorative objects and souvenirs. Underwater springs: the mysterious rivers Fresh water collects in the Massif des Calanques. It is host to an important underwater ecosystem in the Sea. SABLINE DE PROVENCE (Arenaria provincialis) Rare protected species. Unique to the Calanques. CICADA Four years underground before spending the whole summer singing! The cicada lives for approximately 50 days. Male cicadas sing to attract females. In the beginning, 2600 years ago, the Greeks planted the first grape-vine... The Romans continued growing vines next to the sea. In the 16th century, vineyards in Cassis specialised in sweet white wines, and then, in the 20th century, in dry white wines. In 1936: the vineyards of Cassis were awarded the Appellation d Origine Contrôlée (Destination of origin). SHORT LESSON IN WINEMAKING White wines, gold with green 70% reflections, well balanced, full of minerality and iodine finish The Marsanne grape offers elegance and notes of white flowers, the Clairette contributes freshness, the Ugni provides acidity and citrus notes, the Bourboulenc adds a note of flowers of the garrigue, the Sauvignon adds perfumes of grapefruit and apricots and the Pascal blanc brings citrus notes Fresh and aromatic rosé wines, 25% delicate pale pink in colour, full of minerality supported by notes of red fruits. Red wines of a ruby red colour, 5% heady and full-bodied, with aromas of spices and black fruits. They develop notes of leather as they age.
