1 POOLE GRAMMAR SCHOOL Chef / Manager. External Catering. Background Information: Poole Grammar School has recently become an Academy for Years 7 to 13 inclusive (Boys 11-18); from September 2013 there will be 1200 pupils and 120 staff. The School is selective and has enjoyed high rankings in the academic league tables as well as national and regional recognition for its excellence in sport and music. Under the leadership of the Chef/Manager, Chris Watson, the catering department has also received national recognition gaining the Food for Life Silver Award and is closing in on becoming one of an elite group of schools that hold the Gold Award. Chris, himself has won awards from The Times Educational Supplement, the National Association of School Business Managers and Educatering Excellence Awards for his work at the School in the last ten years. Chris recognised in 2006 that the department could fill a niche in the primary schools catering market in the area and currently supplies six schools with a cooked lunch that is delivered and collected daily. In total the unit currently provides 1400 meals a week to these schools. In addition to catering for the schools the department is asked regularly to cater for external events both in school and at external venues so with a new cadre (Year 7) starting in the School from September 2013 which has increased numbers by circa 200 pupils and staff it has been decided to restructure the department to ensure that the pupils at Poole GS continue to enjoy a superb service and in addition add to our growing portfolio of school and external clients. The successful candidate will be expected to start work on Tuesday 27 th August and the appointment is subject to a satisfactory enhanced CRB disclosure (obligatory for child protection) and a medical examination.
2 Poole Grammar School Job Description Job Title: School: Salary Grade: Responsible to: Responsible for: Chef/Manager. External Catering Poole Grammar School Poole Grammar School Pay Scale: Fixed Point 22 ( 20,072) plus bonus based on new business acquired. 37 hours per week 52 weeks per year Catering Manager Between one employee and the whole team in the Catering Managers absence. Main Job Purpose 1. Assist the Catering Manager with the preparation and cooking of all food. 2. Ensure the kitchen runs efficiently and help out with all the kitchen duties. 3. Co-ordinate the external team to deliver and serve high quality, healthy meals to our external clients. 4. Promote Poole Grammar School to acquire new business. 5. Act as a point of contact for our external clients. Main Responsibilities and Duties 1. Reporting to the Bursar through the Chef/ Manager the Chef/ Manager (External Catering) will undertake the following core duties: 2. Assist in the preparation and cooking of all food in the kitchen. 3. Assist with general kitchen duties. 4. Be responsible for the delivery of food to external schools during term-time and collection of same and return to host kitchen. 5. Liaise with the Heads, Business Managers and lunchtime supervisors at the client schools. 6. Liaise with the Chef/ Manager and client schools representatives on the menu cycle. 7. Make and maintain contacts with the Borough of Poole that might lead to acquiring new business from local schools and their numerous courses and conferences for the local schools. 8. Prepare advertising material and make appointments with schools that might wish to become our clients.
3 9. Prepare brochures and advertise the department s services to organisations and individuals who might wish to hold conferences, courses, wedding receptions and events at the School. 10. To act as Deputy to the Chef/Manager and run the department in his absence. 11. Manage the team that delivers the service to our external clients. 12. Assist the Chef/Manager in the annual appraisal of staff, reflect on potential changes in their job descriptions and take an active role in their training needs and supervision. Supervision and Management of People 1. Direct supervision of at least one employee. Co-ordinate the team to ensure the timely delivery of the meals. Knowledge and Skills 1. Management and interpersonal skills and previous experience within a kitchen environment 2. Excellent cooking skills 3. Good general standard of education 4. Ability of lead and motivate a team 5. Excellent communication skills /2 (or equivalent) essential desirable. Creativity and Innovation 1. Working with the Catering Manager to create innovative menus designed to meet the needs of all of our clients. 2. Using innovation to promote Poole Grammar School as a professional catering provider. Contacts and Relationships 1. Maintain frequent contact and relationships with our existing customers. 2. Make contact with potential clients and create professional working relationships. 3. Collaborate with the catering team in the development of the department. Work Environment 1. 4 Person Specification Job Title: School: Chef/Manager. External Catering Poole Grammar School This is an exciting new role in what the local Environmental Health Department describe as the best school kitchen in Poole at a time when it is re-inventing itself to become a nationally recognised department of the highest order as well as increasing its contribution to the overall financial strength of the school. The ideal candidate will be passionate about food, be joining this exciting industry in a role that is more varied than those usually available to an entrant or a person looking for a second job after developing their cooking skills as a member of a busy brigade. You will be a good communicator in the kitchen but also be prepared to put on a collar and tie and meet with the Head Teachers and Business Managers of our client schools as their first point of contact and to have the confidence to sell our services to future clients both from schools and other walks of life. Intelligent and with a good sense of humour you will be able to read between the lines in this document and appreciate that this role could,when you have proved your worth, lead you on to great things in the future. You will have a clean driving license and a soft touch on the accelerator pedal when driving vans containing high quality food. You will aspire to higher achievements when having spent three or four years using your entrepreneurial skills to grow our business allied to a great work ethic you will receive a ringing endorsement from the School as you move on to the next target point in your career. The School will give you the training and the opportunity to gain experience in a variety of areas within the catering and hospitality business. We will expect you to work from 9 to 5 (or as Gordon Ramsey puts it 9.a.m to 5 a.m.) in term time and hours agreed with the Bursar/Chef Manager during the school holidays, pay you a fixed 20k p.a. together with a negotiated bonus linked to the amount of additional business you raise. On that basis I am sure you will not require annual holiday but you will be entitled to 23 days together with membership of a pension scheme.
