1 Department of Apparel, Events, and Hospitality Management (AESHM) Introduction to the Hospitality Industry (3 credits), HspM 101 SPRING 2016, Online: Blackboard Learn Instructor: Mrs. Carolyn Elbert, Lecturer, Apparel, Events, and Hospitality Management Office: 4 MacKay Hall Office Hours: to setup appointment Office Phone: Online Course Description: Introduction to the foodservice, lodging, and tourism components of the hospitality industry, and the essential leadership and management skills necessary for success in the field. Background information, current issues, and future challenges in various segments of the industry are included. Mission of the Hospitality Management Program: Create, share and apply knowledge to develop leaders for the hospitality industry. College of Human Sciences Learning Outcomes: All graduates from the College of Human Sciences should be able to demonstrate the general learning outcomes of 1) Communication; 2) Self-assessment/self-reflection; 3) Critical Thinking; and 4) Ethics, Diversity, and Social Responsibility. Hospitality Management Learning Outcomes: Undergraduate program outcomes addressed within Introduction to Hospitality include: human resources; marketing; leadership; professional communication; customers expectations; and managerial certification. Based upon these learning outcomes in addition to regular class participation; and the successful completion of course readings, materials, activities and assignments; by the completion of this course each student will be able to: 1. Recognize and exemplify the size and scope of the hospitality and tourism industry. 2. Classify and differentiate each major segment within the hospitality and tourism industry. 3. Recall and clarify common terms associated with the hospitality and tourism industry 4. Monitor current issues and trends relative to the hospitality and tourism industry. 5. Summarize the role of leadership and management within hospitality operations.

2 Required Course Materials: National Restaurant Association (2013). Hospitality and Restaurant Management w/ Online Testing Voucher. Pearson Prentice Hall. Walker, J. R. (2013). Introduction to Hospitality, sixth edition. Pearson Prentice Hall. Both texts are available from the ISU Bookstore, and are packaged together. The NRA textbook MUST be a NEW copy for the following reason; inside the front cover is an Online Testing Voucher that you need to take a required exam in this course. Failure to have the Online Testing Voucher on the date of the certification exam (see class schedule) will result in a ZERO on the exam. The Walker text is a new edition (2013). There are numerous changes from previous editions. Should you purchase a used text or an older edition it is your responsibility to be current on all readings. Those students who choose not to purchase the required materials have no excuse for their eventual difficulties in the course or their inability to take the certification exam. Any student found to be engaged in academic misconduct will be subject to the sanctions imposed by the university. By taking this course, you agree that your papers and other written assignments may be subject to evaluation for originality and intellectual integrity (i.e. plagiarism) by use of Blackboard SafeAssign. All papers submitted for review will be included as source documents in Iowa State University s Institutional SafeAssign database so that future student work can be compared to it too. Attendance, Classroom Participation: to be successful in this online course active participation is expected. Active participation for an online course includes regular composition and communication through group and class discussion boards. Communication: is the preferred communication between instructor and students via Blackboard and/or Iowa State University address. Expect to receive a response within 48 hours weekdays (Monday-Friday) between normal office hours. is NOT monitored on weekends (Saturday-Sunday). Online Communication: students are expected to present themselves in a professional manner within the online course just as they would within a traditional classroom. This professionalism includes respect and consideration of fellow students and active participation in group and class discussion boards. If students are found to exhibiting unprofessional behavior they will be asked to correct their behavior or receive a zero (0) on the offending assignment. If anything is offensive, please let me know immediately and steps will be taking to correct the situation. Classroom or Grade Problems: If a student has a course related problem, she or he should discuss it with the course instructor first. If the student is not satisfied, she or he should contact his/her advisor to address the situation. The advisor will suggest possible course of actions. 4 Estimated total required points: Unit Structure: The course is divided into Seven (7) units: #1 Introduction #2 Lodging #3 Beverages, Restaurants & Managed Services #4 Hospitality and Restaurant Management (Certification Exam) #5 Tourism, Recreation, Attractions, Clubs & Gaming #6 Assemblies, Events & Attractions #7 Final Exam 500 points* Each unit will last approximately 1-5 weeks and requires a unit exam and participation in your group discussion board. Unit Exams: are designed to be sure you understand key concepts and terms from the unit. The Unit Exam will be available for three (3) days opening at 8:00am on Monday and closing at 6:00pm on Wednesday the last three (3) days of the unit. All Exams are objective-based, meaning they consist of multiple choice, true/false, and matching questions. The exams will be timed and you will have two (2) attempts to complete the exam your average score between the two attempts will result in your exam score. Please Note that the certification exam (Unit #4) is a proctored exam and MUST be complete on campus at the online testing center (http://www.elo.iastate.edu/online-testing-center/) location on campus to be determined and you must have your online testing voucher found within your NRA textbook, as previously stated on page 1 of the syllabus. The NRA certification exam (Unit#4) will cover only material from the NRA textbook, and is 80 multiple choice questions. You will only have ONE attempt on this exam. The NRA certification exam is used to provide a measure of performance and serves as an outcome assessment for our program. The exam measures how well you know and understand basic principles of leadership and management as they relate specifically to the hospitality field. Unit Exam #1, #2, #4, #5 & #6 will include only material from the Walker text. The final exam (Unit #7) will be cumulative (Walker, Chapters 1-14). Each exam is scheduled for a date range (Monday, Tuesday and Wednesday) online, it is your responsibility to login and complete your exam during the specified time period. When you finish your exam, you will only see the score you received not the questions, if you would like to review your missed questions you many setup an appointment to do so. There are no makeup exams offered in this course Unit #4 Quizzes: are designed to prepare you for the certification exam. There will be two quizzes administered within Unit #4. Quiz #1 will cover the competences of Chapters 1-5 and will include 15 questions. Quiz #2 will cover the competences of Chapters 6-10 and will include 15 questions. Unit Quizzes will be available for three (3) days opening at 8:00am on Monday and closing at 6:00pm on Wednesday. All quizzes are objective-based, meaning they consist of

5 multiple choice, true/false, and matching questions. The quizzes will be timed and you will have two (2) attempts to complete the quiz, your average score between the two attempts will result in your final quiz score. Syllabus Quiz: After you have reviewed your class syllabus, you will complete a ten (10) question objective based quiz covering the competences of the course syllabus. You will have ten (10) minutes and two attempts to complete the syllabus quiz. This quiz will be setup similar to your unit exams and quizzes to get you comfortable with online test taking setup/design. Group Discussion Forums: Each Unit 2-6 requires participation in your group discussion forum. Group Discussion forums topics are designed to give you the opportunity to explore the unit concepts in greater depth. How to be successful in the group discussion forum as a participant: post early and post often, follow the direction of you unit Group Leader. You are strongly encouraged to post related topics including: current events, videos, articles, etc. The group discussion forum is your opportunity to expand your knowledge on a specific course topic. Group discussion posts are due on Thursdays at 6pm (see course calendar for specific due dates). Your designated unit group leader will evaluate your individual performance based off a provided ten (10) point rubric. You will evaluate your leader based off a provided twenty (20) point rubric. Evaluations are Due by Wednesday at 6pm (see course calendar for specific dates) Group Discussion Leader: Each Unit 2-6 will have a designated group leader. Each group member has a number next to their name, this number is the week which you will be the leader of the group discussion board. Your responsibilities as a leader include: facilitate group discussion, encourage active participation and post the group summary/response to the course discussion forum. You will be evaluated by your group members based on your leadership skills and a twenty (20) point rubric. You will evaluate your group members based on their participation and a ten (10) point rubric. Evaluations are Due by Wednesday at 6pm (see course calendar for specific dates) Course Discussion Forums: Each leader will submit a thread representing a summary/response from their group for each designated Unit. Once the threads have been posted, it is the responsibility of all students to review the posts and rate them based off the Five Star Discussion Board Grading rubric. The post with the highest star rating will receive up to 5 extra credit points awarded to the group leader. Extra Credit: is at the discretion of the instructor. I do not offer extra credit on an individual basis. At the end of the semester, when I am calculating final grades, if I determine a need for adjustment of grades, then I may do so, but that is at my discretion. Normal grading distribution:

6 A = 465 points or higher; A- = 464 to 450 points; B+ = 449 to 435 points; B = 434 to 415 points; B- = 414 to 400 points; C+ = 399 to 385 points; C = 384 to 365 points; C- = 364 to 350 points; D+ = 349 to 335; D =334 to 315 points; D- = 314 to 300 points; and F = below 299 points. As instructor I reserve the right to revise final grades prior to grade submission at the end of the semester. Lecture notes (prezi) related to the course are posted in Blackboard. My goal in the course is to give you as much information about the hospitality industry as possible. Both texts provide considerable assistance to the student in terms of learning. The NRA text has numerous features that enhance your understanding of concepts. Each chapter contains key terms to know, a case study to illustrate a concept, exhibits to illustrate key points, and application exercises that allow you to test your understanding of the material. The Walker text includes a number of features in each chapter designed to enhance your learning. There is also a companion website to the text, available at that contains sample questions, a downloadable PowerPoint presentation for each chapter, and links to other resources As instructor, I reserve the right to revise the syllabus.
