In the early middle Ages, the castle gave birth to the agglomeration. Between the XIVe and XIXe century, 2000 inhabitants lived in Castelnaudary and they were dependent on agriculture, arts and crafts. In the XVIe, the dramatically changed the features of the town, with windmills and unprecedented development. Castelnaudary was the only large port between Toulouse and the sea. Nowadays, this town on the is the capital of the Cassoulet (White beans with pork, goose, duck and sausages). You will be able to visit the Saint-Michel Collegiale built in the XIIIe, with its alleys and lanes, typical of such an old town. There are good private hotels of the XVIIIe and also many encorbelled houses, together with the Presidial, a former castle that has a magnificent Renaissance frontage.

All services such as local doctors, banks and post offices are also situated in the town centre. Most of them close between 12pm and 2pm. There are 2 supermarkets in Castelnaudary.
