Peralta Community College District Annual Program Update Template DISTRICT-WIDE DATA by Subject/Discipline Fall Semesters I. Overview BI Download: 10/24/2014 Dept. Chair: Mary Louise Zernicke Subject/Discipline: NUTR Dean: Ahmad Mansur Campus: Mission Statement Merritt College The mission of Merritt College is to enhance the quality of life in the communities we serve by helping students to attain knowledge, master skills, and develop the appreciation, attitudes and values needed to succeed and participate responsibly in a democratic society. To accomplish its mission the College provides open access to excellent instructional programs and comprehensive support services in a culturally rich, caring and supportive learning environment. Our purpose is to provide opportunities for lifelong learning, contribute to the economic growth of our communities while assisting students to attain degrees and certificates, earn credits to transfer and develop the skills necessary to complete their educational goals. The mission of the Department of Nutrition and Dietetics is to train students who will positively impact nutrition and wellness in the community. The mission of the Dietary Manager and Dietetic Technician programs is to prepare competent, entry-level professionals who meet all professional standards, display superior customer service, and work collaboratively and with empathy in diverse communities. 4 III. Qualitative Assessments CTE and Vocational: Community and labor market relevance. Present evidence of community need based on Advisory Committee input, industry need data, McIntyre Environmental Scan, McKinsey Economic Report, licensure and job placement rates, etc. Employment outlook in dietetics is for projected growth of 20% during the decade. Merritt College is the only community college in CA to offer the Dietary Services Supervisor (DSS) and Certified Dietary Manager (CDM), which is a major asset for our students. It is anticipated that there will be a national requirement from CMS and the Affordable Care Act (ACA) to make all food service managers in a CMS facility be a CDM. The Association of Nutrition and Foodservice Professionals has a bill pending at the federal level to require all dietary managers in all states to be CDMs. If and when this passes it will mean that our program will be very much in demand. In the DM program, 100% of and grads looking for a dietary manager job found employment. (About 40% of DM students go on to the DT program and were not included in data.) Advisory Committee members state that there is a need for well trained managers. Passage rates on the national CDM exam were slightly under national averages in the last two years, until the numbers returned to us this fall which showed improvement. We have modified the 70A seminar to focus more directly on the exam. DTR exam pass rates from Jan-June 2014 were 67%; while the standard is 70% the national average is 62%. ANFP data indicate that dietary managers in the SF area are the best paid in the US, with an average salary of $59,581, up 25% since The average salary range in our region is from $49,000 to $72,313. Transfer and Basic Skills: Describe how your course offerings address transfer, basic skills, and program completion. At this time, it is anticipated that the Nutrition and Dietetics AS-T will be available in February Our faculty is working with Steve Pantell to ensure that we will have our "ducks in a row" and pounce on this opportunity ASAP. Steve is working with other departments to make sure that Curricunet reflects the Nutrition and Dietetics requirements.

IV. Course SLOs and Assessment Fall 2014 Number of active courses in your discipline 10 Number with SLOs 10 % SLOs/Active Courses 100% Number of courses with SLOs that have been assessed 90% (will complete 100% by Dec 2014) % Assessed/SLOs 90% (will complete 100% by Dec 2014) Describe types of assessment methods you are using In classes, assessment methods include: Exams; General and Capstone assignments; Group projects; Moodle forums and quizzes Describe results of your SLO assessment progress The Nutrition and Dietetics department practices CQI. Our assignments, exams, and group work each semester are reviewed each semester. In general, we have learned that our students are very weak in math. We have begun spending more time on basic and culinary math in our classes. Per preceptor feedback, our program interns are also weak in application of learning. In response, we have added several case studies worksheets in both the DM and DT seminar classes. We have also increased the emphasis on regulatory bodies and requirements as a result of preceptor feedback. Describe how assessment results and reflection on those results have led to improvements. We have no prerequisite for Nutrition 10. Some students are not prepared for this UC-transfer, science and math class. We have instituted a math self-assessment exam that is given to students on the first day of class to help them assess their readiness for Nutrition 10. As a result, some students are dropping Nutr 10 before census, and coming back when they have taken basic math coursework. Student pass rates for the ServSafe exam average approximately 90%; the national pass rate is approximately 75%.

V. Program Learning Outcomes and Assessment Number of degrees and certificates in your discipline 2 Fall 2013 Number with Program Learning Outcomes 2 Number assessed 2 % Assessed 100% Describe assessment methods you are using Capstone assignment; Culmination exam; 150+ student competencies completed; Preceptor evaluations; Case studies Worksheets LDQs Describe results of assessment. Describe how assessment of program-level student learning outcomes led to certificate/degree program improvements. Student pass rates on the national CDM exam typically mirror national averages, within 3-5%. We have added a culmination exam at the end of the DT program. Students may not sit for the national exam from AND if they have not passed the culmination exam at Merritt College. Student pass rate of DT has improved to acceptable rates.

VI. Strategic Planning Goals Check all that apply. Advance Student Access, Success & Equity Engage our Communities & Partners Build Programs of Distinction Create a Culture of Innovation & Collaboration Develop Resources to Advance & Sustain Mission Describe how goal applies to your program. 1.Our student pool is representative of vocational CTE students. Last year, 94% of the students who started the DM internship complete the program and were job-ready. In addition, the pass rate on the national CDM exam for our students is improving. Students who do not pass the national exam may still work as a DSS in the state of California, and so are still job-ready (although at a typically lower salary scale). We are currently resurrecting the Nutrition Club and have several engaged and excited students. ASMC has received our application and we expect to move forward in spring We use preceptors to support students. Each intern typically goes to two sites, so we partner with at least community partners who donate their time each semester to place students. We are well known locally, and continue to look for outstanding preceptors, many of whom are our former students. We also bring in many guest speakers in several of our classes, and provide extra credit to students who attend community events. A continuing education seminar for CDMs is currently being planned for Merritt College in spring Our students and preceptors will benefit and we hope that we will be able to send them at a free or reduced price. Our department is working with ASMC to support a monthly drop off of food from the Alameda County Community Food Bank to support low income and food insecure students. 3. Our DM program did not receive a single recommendation for change at the last reapproval process, in Our DT program has improved its pass rate since 2011 (when we were put on probation due to poor pass rates), and passage now hovers near 70%. Considering that our students are typical CTE students--not always the same pool nationally-- we are very proud. We continue to build on those successes. Our DT program had a site visit from accreditors AND in Spring The recommendations were relatively minor and the

overall assessment of the quality of the program was very good. The reviewers were impressed by our student diversity and staff commitment to the program. 4. Our department is very comfortable with innovation and change. We look for new ways to present the materials and all staff stay current in their field. Full time and adjunct faculty work together to develop the classes, and adjunct faculty attend our Advisory Committee meeting to provide input. 5. We hope to provide additional support for our students when the new D building is completed. We are currently lacking a kitchen space, which limits our capacity to train our students. We currently rely on our community partners for assistance. VII. College Strategic Plan Relevance Check all that apply New program under development Program that is integral to your college s overall strategy Program that is essential for transfer Program that serves a community niche Programs where student enrollment or success has been demonstrably affected by extraordinary external factors, such as barriers due to housing, employment, childcare etc. Other

VIII. Action Plan Please describe your plan for responding to the above data (quantitative, qualitative, and data specifically from course and program learning outcomes assessment). Consider curriculum, pedagogy/instructional, scheduling, and marketing strategies. Also, please reference any cross district collaboration with the same discipline at other Peralta colleges. Include overall plans/goals and specific action steps. We have contacted Laney's culinary program several times in the last years. Unfortunately, we have had minimal response. We wanted our students to be able to take Culn 212 without having to be enrolled in the culinary program there. Since the new building has begun, we have not followed up this year, assuming that we will soon have our own lab!! We work closely with our counseling department to explain the skills needed for these CTE careers. For example, most 18 year olds will be challenged by supervising a long tenured cook in a facility, so mature students are a good fit for us. Additionally, we remind counselors of the math skills needed. Our department chair will continue to attend a counseling meeting at least annually. We send out a letter describing our program to each long term care facility in Alameda County once a year, to ensure that administrators are aware of the program at Merritt for their cooks and uncertified managers. We will continue this practice. Staff work collaboratively to make sure we have departmental rubrics and syllabi that reflect the requirements of our accrediting bodies, ANFP, AND and the State of California. Faculty wil continue to be expected to attend the Advisory Committee meeting, flex day, and all staff meetings. IX. Needs Please describe and prioritize any faculty, classified, and student assistant needs. Student tutors for the nutrition department each day of the week. Nutrition and math tutors available in the learning center. Adequate funding to attend local and regional meetings. Please describe and prioritize any equipment, material, and supply needs. Office and instructional support supplies, including classroom A/V. Support for interns, including access to AND Diet Manual, and sample exams. Please describe and prioritize any facilities needs. Total cost of ownership for food science lab equipment needed. Improve security in the D building. Adequate office space of FT faculty and adjunct faculty in D and S buildings. Increase storage area in new science building. Build office Computer Lab to augment tutoring. Adequate funding to purchase up to date instructional material/supplies.
