The suggestions come from reports from customers and the personal experiences of our staff and friends. Special thanks to Ann Armour, Emily McGrath and Carl Denlinger. We also use and recommend Gayot's The Best of France Gault Millau, the red Guide Michelin, Frommer s and Bon Appétit as references. Doorways, Ltd., wishes you a Bon Appétit! $ Reasonable $$ Moderate $$$ Expensive PROVENCE Aix-en-Provence Le Clos de la Violette, 10 avenue de la Violette. $$$ Located in an elegant residential neighborhood, this is the most innovative restaurant in town. This imposing Provencal villa with a spacious garden and beautiful chesnut trees has several modern dining rooms. The food produced by Jean Marc and Brigitte Banzo has been called a song of Provence. Rated 2 stars by Michelin. Relais Sainte-Victoire, Beaureceuil $$$ This unique family inn is in the heart of Cézanne country, Beaureceuil a village at the bottom of the Ste Victoire Mountain that inspired the painter. Enjoy the beaufiful countryside and the healthy and tasty cuisine from the sun. Chez Maxime, 12 place Ramus. $$ An extra warm welcome and excellent meat dishes draw a jostling crowd of locals to the banquette of this engaging bistro. Enjoy dining out on the terrace of the cute Place Ramus. Tempting desserts; don t miss the crème brulee; fabulous wine list. Poivre d Ane, 7 rue de la Couronne. $$ Excellent Provencale cuisine in this intimate restaurant. Reservation is a must. Les Deux Garçons, 53 cours Mirabeau. $ Terrace dining on the main pedestrian boulevard, in this famous café frequented by Cézanne and M.K.F. Fisher in Two Towns In Provence. Enjoy the shade trees and fountains on the boulevard while peoplewatching and dining. Makes an elegant stop for lunch.

2 Avignon La Mirande, 4 place de la Mirande $$$ In the heart of Avignon, this restored 700 year old town house is one of the grand little luxuries of France, far better than anything in town. Behind the Palais des Papes, this hotel-restaurant treats you to 2 centuries of decorative art in France. The restaurant earns its one star in Michelin and is among the finest in Avignon. Christian Etienne, 10 rue Mons $$$ The dining room contains very old ceiling and wall frescoes honoring the marriage of Anne de Bretagne to the french king in Excellent French food. Brunel, 46 rue de la Balance. $$$ Terrace dining. Some claim that this is the best restaurant in Avignon. It is known for zucchini, eggplant and noisettes of lamb. Closed Sun. and Mon., July 15-Aug. 15. Hiély-Lucullus, 5 rue de la République. $$ Fixed fee for lunch. Excellent reputation. Closed Tues. lunch & Mon. off season & Jan & June 19- July 4. Les Baux-de-Provence L'Oustau de Baumanière, Val d'enfer. $$$ Elegant garden dining, luxurious cooking. Closed Wed. & Thurs. lunch off season, Nov. 15-Dec. 7 & Jan. 16- Mar. 3. Tucked away among the fig trees at the head of a narrow ravine below is the legendary L Oustau de Baumanière. La Riboto de Taven, Val d'enfer. $$$ In summer, you can sit out at the beautifully laid tables, one of which is a millstone. Closed Wed., Tues. dinner off season, Jan. 3- Mar. 15. 3 Fontvieille NOTE: Fontvieille, easily accessible from Tarascon, Beaucaire, Avignon and Arles, is a small town, but its roster of outstanding restaurants is very impressive. Prices range widely, but because the town is small, the menus of the various restaurants are easily evaluated. Hillside inn with views of the olives groves, orchards and vineyards that make the Lubéron seem like a vast garden. Maillane L'Oustalet Maïanen., 16 rue Lamaqtine $ Excellent presentation of Provençal cooking. Closed Sun. eve. and Mon. Paradou Le Bistrot du Paradou, Avenue de la Vallée des Baux. $$ La Treille, Paradou $ Warm welcome in this family run restaurant. Delightful food. St-Paul de Vence La Colombe d'or, place du Général de Gaulle. $$$ Dining a la carte only (closed from Nov 6 -Dec. 20). This restaurant doubles as a museum of modern art, it was a popular gathering place for many of the modernist painters such as Picasso, Matisse, Modigliani Bonnard and Miro who would sometimes clear their debts at la Colombe d Or by giving paintings to the owner. The works are displayed in the dining room, where the food is good, the art superb and the 3

4 experience one-of- a-kind. X.A. is named for the owner, Xavier. One of our favorite restaurants in the area. Metro : Louvre $$$ This restaurant has been around since the reign of Louis XV. Dining here is a great gastronomic experience. Closed Sat, Sun, Aug. Le Soufflé, 36 rue du Mont-Thabor. Métro: Tuileries $$$ Excellent quality, justifiably famous for its soufflés. Reservations are recommended, closed Sun. Le Toupary, La Samaritaine, 19 rue de la Monnaie. Metro : Pont Neuf. $$$ Superb 360 degree rooftop panoramic view of Paris. Café Marly, 93 rue de Rivoli. Metro : Palais-Royal-Musee du Louvre. $$

Metro : Trocadero. $$$ Three star Michelin chef. The food remains sober in presentation, true, precise, and authentic in its flavor. On the ground floor of the restored, four story mansion is a bar stocked with rare brandies and fine cigars. 17 th Arrondissement Baumann-Ternes, 64 avenue des Ternes. Métro: Ternes $$$ NOTES: Many French restaurants offer two ways of ordering. You can make selections from the menu which is called "à la carte" or pay a fixed price for a whole meal which is called "menu." Sometimes you will have a choice of several different fixed price menus. French dinners are divided into four or five courses. The familiar hors-d'oeuvre can include cold or hot appetizers which can be substituted for a hot or cold soup. Some restaurants have begun to imitate American restaurant procedure and will bring a salad before the main course, l'entrée, which can be either fish or meat, or both. Along with l'entrée you will have a choice of vegetables, légumes. After l'entrée, the cheese platter will be brought so that you can choose several cheeses, but the waiter will serve you. And finally, the dessert tray will be presented to you. Remember that you can order whatever you want and you do not need to eat a four- or five-course meal, unless you want to. You will not be rushed. Normally, one course is served at a time, so that if you want to have soup while your partner has hors-d'oeuvre, inform your server that you want the two dishes served en même temps, at the same time. At the end of the meal, your server will wait tactfully for you to signal that you are ready to pay your bill rather than to bring the check (l'addition) to your table. Nearly all restaurants have a closed day, so phone ahead to make a reservation. French restaurants open at 12 or 12:30 for lunch and 7 or 8 for dinner. The best restaurants fill up, although French people dine later than Americans, so you may have luck if you go early even if you do not have reservations.
