2 Welcome to the Culinary Olympics program in Erfurt, Germany and Florence, Italy. ACCENT works with the Coast Community College District (Orange Coast College) to provide an exciting overseas program with extensive on-site support. On this program, participants stay in local area hotels while attending the prestigious Culinary Olympics in Erfurt. In addition to the Culinary Olympics, the program visits Florence, where the ACCENT Florence Center staff provides support and guidance to program participants. The International Culinary Olympics The International Exhibition of Culinary Art 2012 is a world-class event held every four years. More than 1000 cooks and confectioners from 33 countries competed for medals and the Olympic champion title in There were 115 national and regional teams participating along with 300 individual exhibitors. Attending this event includes viewing the spectacular displays, watching live cooking competitions and plate presentations held in glass kitchens, enjoying a large vendor fair, and attending award ceremonies. Presentations change daily throughout the four-day event. There is also an opportunity for the attendees to purchase tickets to taste some of these culinary delicacies. More information can be found at the following web site (click on British flag for English version) : The event, usually held in Germany, was originally hosted in Frankfurt and Berlin and is now being held for the 4th time in Erfurt. Erfurt is the 1,260 year old state capital of Thuringia and is known for its medieval city center and its regional cuisine. Erfurt, Germany & Florence, Italy October 6 - October 17, 2012 The Academic Curriculum Students will be enrolled in CA199 (1 unit) Current Issues in Culinary Arts. This course is designed to present current issues and special topics related to the culinary art profession. As part of this class, students will participate in historical and cultural tours of Erfurt, Germany and Florence, Italy, attend international level culinary competitions and exhibits and attend hands-on culinary instruction on regional cuisine. In addition, students will learn about the origin, processing and tasting of wines and olive oil, visit regional markets and attend cultural events. Student Services: The ACCENT Centers ACCENT is a study abroad organization that works with over 50 colleges and universities to provide academically challenging and culturally enriching overseas study programs. ACCENT has fully-staffed Centers in Paris, Florence, London, Madrid and Rome that serve as a home base to program participants. The San Francisco Center assists students with enrollment and pre-departure preparation. The staff in all six ACCENT Centers have extensive personal experience in travel and overseas study, and are available to answer questions throughout all phases of the program. The fully staffed ACCENT Florence Center, located in the historic city center on the Piazza Santo Spirito, serves as a home base to program participants on the Florence portion of the program. The ACCENT Center is open during the week for students to use the resource and lending library, ask questions, collect their mail, check and take advantage of a variety of other services.

Introduction to International Exhibition of Culinary Art 2012 Day 3 Sunday, October 7, 2012 Guided walking tour of historical Erfurt, the 1260 year old medieval capital of Thuringia to include St. Mary s Cathedral, the Church of St. Severus and the Merchants Bridge which is the longest inhabited bridge in the world. You will soak in the sites of patrician townhouses and reconstructed half-timbered buildings. Attend Culinary Olympic Opening at Messe 2012 Day 4 Monday, October 8, 2012 Attend International Exhibition of Culinary Art 2012 Day 5 Tuesday, October 9, 2012 Attend International Exhibition of Culinary Art 2012 Day 6 Wednesday, October 10, 2012 Transfer to Frankfurt Airport for group flight participants for flight to Florence, Italy, the fountainhead of Renaissance art nestled in the Tuscan hills, rimmed by olive groves and vineyards. It is a culinarian's delight filled with gastronomic adventures. ACCENT orientation to Florence. Day 7 Thursday, October 11, 2012 Guided historical walking tour to the Galleria dell'accademia and the Uffizi Gallery. Day 8 Friday, October 12, 2012 Experience the Art of Italian cooking during a hands-on cooking class at Apicius: The Culinary Institute of Florence with either lunch or dinner. Day 9 Saturday, October 13, 2012 Gastronomic walking tour of Florence. Afternoon on your own for shopping or sightseeing. Evening performance. Day 10 Sunday, October 14, 2012 Day on your own in beautiful Florence to shop, eat and experience the wonders of this exciting city. Day 11 Monday, October 15, 2012 Day-long excursion outside the city to Chianti to visit Radda, Badia Coltibuono, attend a hands-on Volpaia cooking class and have a tour of the village and vineyard visit. Day 12 Tuesday, October 16, 2012 Morning free for shopping and site explorations, farewell lunch. Day 13 Wednesday, October 17, 2012 Say "Ciao" to Florence as you depart for the airport and group flight from Florence to LAX via Frankfurt or Munich. Erfurt, Germany The Program Faculty Barbara Cooper has been a full time faculty member in the Hospitality department at Orange Coast College for the last thirteen years teaching operation management and production classes. She has worked at OCC in a number of capacities starting as a Food Service Worker and Steward to serving as General Manager of the Instructional Food Service, managing the cafeteria operation and coordinating the instructional labs for 12 years. This will be Prof. Cooper's 7th culinary adventure and her fifth trip to the Culinary Olympics. In 2004 she lead a 10-day tour of Germany and Italy with highlight visits to the Culinary Olympics and the culinary culture of Florence. Other trips include the 1988 Culinary Olympics and the 1990 Salon Culinaire in Singapore, and an Italian Culinary Tour with ACCENT in Prof. Cooper has completed an A.A. in Food Service Management at OCC, a Bachelors in Business Administration from Cal State University, Long Beach and a Masters degree in Educational Administration from National University. Susan Coleman, former Coordinator of Career Education, has 31 years of teaching and administrative experience at Orange Coast College. For the past 25 years, Susan has been organizing and leading groups around the globe on cultural learning expeditions. Susan lived in Germany for 2 ½ years and has recently led a group to Florence, Italy and Russia. Susan will supervise the logistics and cultural aspects of the trip in addition to teaching students how to be good travelers and record their experiences. Transferable Academic Credit This program is offered for transferable college credit through Orange Coast College, part of the Coast Community College District. Orange Coast College will provide a transcript upon request for the coursework completed overseas. Please verify the transferability of courses with your advisor or registrar before you apply. Application and Enrollment The Erfurt & Florence Culinary Program is open to anyone over 18 at the time of application. Program space is limited. Students should send in the enclosed application with the $250 non-refundable first payment as soon as possible. Upon receipt of your application and first payment, ACCENT and Orange Coast College will send you additional application and enrollment forms. Applications must be received by July 27, Beyond July 27, limited enrollment is allowed when space permits.

Failure to make each payment when due shall automatically cancel participant from the program one week after payment due date. All payments are effective the day they are received by the ACCENT San Francisco Center. ACCENT, in its sole discretion, may reinstate an applicant subject to availability of space and late enrollment fees. ACCENT charges a $30 bounced check fee for each check received that is not promptly paid by your bank in the normal course of business. Student Housing Students will stay in double rooms in two star hotels in Erfurt and Florence. Breakfast is included daily in the hotels. Housing is provided from the first day of the program (October 6, 2012). Required Student Insurance All program participants are required to purchase short-term outbound study abroad insurance through an approved District insurance provider. Program participants can find further information on the required study abroad insurance at Program participants must purchase this study abroad insurance no less than 60 days prior to program departure. Failure to purchase the required study abroad insurance shall prevent student from participating in the study abroad program. CCCD Tuition & Fees Academic credit for this program is awarded by Orange Coast College. A per unit enrollment fee must be paid to CCCD at the time of registration. Participants are liable for payments until written cancellation is received. The Coast Community College District is NOT liable for any damages arising out of the services described herein, including, but not limited to any promises or representations, whether expressed or implied. Nothing contained herein shall be construed to in any way bind the District, the District Governing Board, any of their agents, employees or representatives to any promises, obligations, covenants or duties whether expressed or implied herein. ACCENT is not responsible for the academic segment of the program except as specified in the contract between ACCENT and the Coast Community College District. Nor is ACCENT responsible for airline delays of any kind, or for expenses or loss incurred as a result of such delays. With regard to transportation/travel, regardless of the type of vehicle, ACCENT acts for the passenger as agent only. ACCENT assumes no liability for accident, injury, damage, or loss in any vehicle, or as a result of default by any person or company engaged in transporting the passenger.
