1 PROGRAM DESCRIPTION Culinary and Dietary Operations Management Baccalaureate Program Infmation, CAP 303 Permit, and Program Application Packet Schoolcraft College offers a Bachel degree program to experienced culinary students who wish to further their education in der to obtain positions of higher responsibility in the food service nutrition industries. Culinary and Dietary Operations Management Program The Bachel degree option, the Culinary and Dietary Operations Management Program, is designed f students who are interested in advancing to positions of higher responsibility in the food and nutrition industry. This program will provide a blend of management, science, and nutrition courses, including experiential instruction under the guidance of a Registered Dietitian. This program also prepares students to test f the Certified Dietary Manager (CDM) credential. CAP 303 Culinary Program Practicals This course is designed to be a foundation to the culinary bachel degree program. Students will demonstrate proper culinary skills. Learning strategies will focus on knife handling skills, team skills and professionalism, safety and sanitation, financial control practices, equipment utilization, identification of food products, nutritional guidelines, cold food garde manger, butchery skills, an awareness of international cuisines and cultures, and a high level of understanding of culinary techniques. Application of appropriate technology f a career in the Culinary Arts, along with critical research skills, will be addressed. Imptant Infmation about the CAP 303 Culinary Program Practicals course: Once all assessment requirements have been met and any necessary foundation coursewk is completed, you must meet with a counsel academic advis to obtain a CAP 303 permit. This permit will allow you to register/wait list f CAP 303. The CAP 303 Culinary Program Practicals course is used as an entrance requirement f a baccalaureate degree in Culinary and Dietary Operations Management Program. During CAP 303, students will be assessed on their current culinary skills to ensure preparedness f future studies, as well as to reinfce the high levels of rig expected at Schoolcraft College. As a result, students may be required to increase their skills in specified areas. Students will wk with the Culinary Arts Department to develop a plan to ensure their best opptunity f success. 2 APPLICATION REQUIREMENTS The Culinary and Dietary Operations Management Program requires an application (attached to the end of this packet). To be admitted to the program the student must complete the following: 1. Apply to Schoolcraft College Apply to Schoolcraft College online at 2. Transcripts 3. Program Admissions Requirements Request official undergraduate transcripts from all colleges and universities previously attended. Transcripts must be sent directly from the issuing college university to Schoolcraft College. To confirm that the transcripts have been received, contact the Answer Center at Has received an associate degree in culinary arts from an institution accredited by ACFEFAC at time of graduation. List of accredited institutions and dates of accreditation available at Schoolcraft College Culinary Arts students who graduated with an associate degree in 2005 later will meet this requirement. Submit official undergraduate transcripts. Has current credentials from ACFEFAC of a Sous Chef higher (provide credential card). Has previous professional chef experience. Student will be evaluated by the culinary department which includes an interview and ptfolio review. Contact the Culinary Arts Department f further details at Counseling and Assessment CAP 303 requires minimum assessment levels course wk in the areas of math, reading and writing. Students should meet with a counsel academic advis to develop an academic plan. They can determine if an assessment test is necessary and if foundation courses are needed. Students with pri bachel-level college wk a degree may be exempt from placement testing. Students who have submitted ACT sces that are less than three years old to the Registration Center may also be exempt from assessment testing. Obtain Sanitation Certificate Submit proof of a valid ServSafe Food Protection Manager Certificate earned within the last five years to the registration center. Students may prepare to complete this requirement by taking Schoolcraft s CAP 102 culinary sanitation course, continuing education class other opptunities in the community. 5. Software Application prerequisite Complete CIS 120 Software Applications equivalent with a grade of 2.0/C better. Please note CAP 303 is restricted to regularly admitted students; Dual and Special high school students are not eligible. 7. College prerequisite coursewk- CAP 303 Complete CAP 303- Culinary Program Practicals with a grade of 2.5 better. Your grade must be posted to your transcript befe you submit a program change fm. 8. Cumulative GPA Attain a cumulative grade point average of 2.0 better f all Schoolcraft College courses f entrance into the program. 9. Completion of all sections of this application with signatures from academic advis/counsel is required to be accepted into the Culinary and Dietary Operations Management Program. This will include an infmation session to learn me about the Schoolcraft College culinary arts program, the application process and a tour of the facilities. Please note that eligibility f CAP 303 requires issuance of an electronic permit by a counsel academic advis. To be issued a permit, you must wk with a counsel academic advis who will verify that the following requirements have been completed. Upon completion of CAP 303 with a grade of 2.5 above, plan to meet with a counsel academic advis to complete an application to do the following: Develop your educational plan f completing the bachel degree requirements. Complete the Program Change Fm with signatures from academic advis/counsel to be accepted into the Culinary and Dietary Operations Certificate.
