1 Team California for Healthy After Schools (TCHAS) Nutrition Education Supplemental Materials These materials are to enhance TCHAS nutrition education programs and to use in conjunction with the core curricula materials they are already using. These materials were selected based on features of the core curriculum and supportive items from the Nutrition Education Resource Guide. All resources are available for free loan from the California Healthy Kids and After School Resource Center. RESOURCE The Growing Classroom, The: Garden-Based Science, Revised (#4923) This resource book provides over 140 activities that infuse gardening with science and nutrition activities. It includes step-by-step instructions for setting up a gardenbased science program and outdoor classroom activities. Topics include working together in the garden, nutrients, garden ecology, climate, nutrition, gardening tips, and food choices to help students make the connection between nature and health. Grades 2-6 Fruits and Vegetables Power Play! (#1364, #1365) These activity sets encourage students to eat more fruits and vegetables. Students prepare healthy snacks, taste-test different regional foods, use scientific inquiry and observation, and conduct surveys. The activities are designed to increase students' awareness of the importance of fruits and vegetables in healthy eating and foster skills that enable them to make healthy choices. Grades 4-5 (Activity Sets) 1

2 CATCH: Coordinate d Approach to Child Health, Kids Club Activity Set (#7858) CATCH: Coordinate d Approach to Child Health, Kids Club Nutrition (#7430) Kids Cook Farm-Fresh Food (#1439) This resource promotes healthy physical activity in after school settings through 300 physical activities. Each activity category includes introductory cards with objectives, safety tips, and teaching cues; activity cards with grade level, skills emphasized, equipment needed, and level of difficulty; and task cards with diagrams and brief descriptions about the movements. These activities provide at least 30 minutes of daily physical activity time, give students opportunities to participate and practice skills, and involve all students in moderate-to-vigorous activity. This resource is based on the Coordinated Approach To Child Health (CATCH) program and is designed for after school education and summer enrichment programs. Children in grades three through five learn nutrition knowledge and skills to empower them to make healthy food and physical activity choices. The manual includes 32 sessions with teaching tips, exercises, and scripted teaching aids. Stories, rhymes, and songs add to a fun social-learning experience. Student work sheets, simple recipes, and handouts with recipes to make at home with family members are provided, together with reproducible materials in English and Spanish. This material contains activities, recipes, profiles of local farmers, and correlations to academic content standards for English-language arts, history and social science, mathematics and science. It is designed to promote the use and enjoyment of fresh, seasonal, California-grown produce Student learning is assessed using journals and with prompts throughout the lessons for students to keep record through diagrams, drawings, or writing. Tips for conducting food tastings, organizing field trips, cooking with kids, activity preparation, recipe demonstration, and cooperative learning are provided together with a glossary of agriculture and cooking terms, an equipment list, and additional references. 3 Botany on Your Plate: Investigating the Plants We Eat (#9940) This resource explores the science behind edible plants. Students use the scientific method to examine plant roots, stems, leaves, flowers, fruits, and seeds. They engage in observation, dissection, journaling, discussion, and tasting of plant snacks. The activities reinforce literacy, mathematics, social studies, and nutrition skills. Grades K-4 Grades K-8 This resource uses mathematics as a springboard to teach students about basic gardening. The activities also reinforce problem-solving, literacy, and nutrition skills. Math in the Garden: Hands- On Activities That Bring Math to Life, Ages 5-13 (#9938) 3

4 Cooking with Kids Series (#7194, #7195, #7196) This three-level multicultural food and cooking education program includes a curriculum, video, student workbook, and book of recipes in Spanish and English in every grade level set. Each curriculum includes nine lessons, an overview of the three program components, tasting classes, cooking classes, and incorporation in cafeteria meals. Background information, equipment, and children's book lists, sanitation and safety tips, parent invitations, letters to classroom volunteers, and alignment with New Mexico Language Arts, Math, Social Studies, Health, and Science standards are provided. Lessons are comprised of an introduction to units of measure and kitchen rules, followed by four, one-hour tasting experiences alternated with four, two-hour cooking sessions. Students learn cooking and cooperative work skills by preparing tostadas, tamales, paella, and fettuccine. The cooking segment offers an introduction and discussion, background about the food and farmers that produce it, group organization, serving the product, eating together and evaluating the results and cleaning up. The video depicts the program components and illustrates their implementation. Student worksheets are provided. EatFit (#1506) This program contains nine lesson plans and a 20-page student workbook that can be used in conjunction with the EatFit Web site. Self-assessment and goal tracking are the primary strategies used to promote student behavior change. Students then choose one area of weakness and set fitness and eating goals for improvement during the remainder of the program. The analysis is also available in a paper version for students without computer access. Lessons include background for the teacher, lesson overview, timeline, objectives, links to California Department of Education Content Standards, lesson enhancements, recipes, questions, closing discussions, and take-home activities. Fitness, food labels, breakfast, media literacy, and fast food are some of the topics addressed in the lesson plans. In addition, a variety of investigative and experiential activities, role-plays, and games are provided for small group and independent practice to encourage students to apply the lessons to reallife situations. 5 Camp BOOST Out-of-School Time Program (#9072) This resource develops life skills and wellness habits through the use of dramatic play, arts and crafts, and discussion in out-of-school time settings. It consists of six thematic units organized by age ranges five-toeight and nine-to-twelve: life skills, conflict resolution, nutrition, substance abuse prevention, safety, and fitness. Each lesson contains a key message, materials, vocabulary list, discussion prompt, interactive group activity, literature link, and home connection. Students engage is such activities as making personality portraits, acting out healthy habits, writing limerick poetry, and more. Resources, bonus materials, and family letters are included. Youth Development and Physical Activity (#7827) This resource provides strategies for incorporating physical activity and youth development in after school programs. It includes background information about today s youth and strategies for serving underserved youth through community collaboration, developing youths leadership skills, and evaluating physical activity programs in regard to youth development. The resource provides physical activity tips and real-life examples for a variety of youth programs, including outdoor/adventure programs, school-based programs, extended day clubs, mentor programs, alternative physical education programs, and cross-age teaching programs. Professional Reference (#7988) Yoga Pretzels This resource provides 50 different simple yoga activities that elementary students and adults can do together. The activities are divided into nine sections: Breath, Games, Balance, Stand, Forward Bend, Back Bend, Twist and Stretch, Partner, and Time In. Each activity consists of one card. The front of the card lists the name and type of the yoga activity and an illustration of the activity, and the back of the card gives instructions for the activity. This resource includes an introduction full of tips, including safety tips and tips for maximizing the potential of each activity. Activity Set 5

6 Media-Smart Youth: Eat, Think, and Be Active! (#7393) Body Aloud! (#5310) This interactive after school program includes ten lessons that address media awareness, nutrition, physical activity, and media production. Youth learn to think critically about how media can affect their nutrition and physical activity choices; build skills to make good decisions about being physically active and eating nutritiously; and establish lifelong healthy habits. Each lesson incorporates a related video module, three activities, snack and action breaks, mini-production and take-home ideas, and student work sheets. The set includes a Facilitator's Guide, poster, DVD, and video with segments to supplement the lessons and provide an overview for adult facilitators and youth participants. This guide provides information and resources to offer an eight-week, peer-led eating disorder prevention program in schools, after school, and youth serving agencies. The program addresses social justice for overweight people; developing positive body image; and engaging teachers, students, parents, and health care providers in systemic changes that promote size acceptance. Planning tools, sample letters, parent consent forms, discussion guidelines, and peer trainings are incorporated in this manual to conduct the program and develop youth leadership. The appendixes provide reproducible student assessment forms (Eating Attitudes Test, Body Satisfaction Scale, Eating Disorder Diagnostic Scale), as well as extensive resource and referral information.
