3 FIAB FIAB (The Spanish Federation of Food and Beverage Industries) is an umbrella organization of most of the food and beverage associations and more than 8000 manufacturing companies in Spain. Its basic function consists of informing its members about events and developments which are relevant to the sector. FIAB also represents the interests of its members in discussions with administrative and decisionmaking bodies on national, European and international levels. Accordingly, its activities are focused on the following areas: economy, fiscal policy, research and development, labour affairs, food legislation, promotion of foreign trade, training, environment and communication. In particular, the promotion of foreign trade is effected through supporting Spanish companies and their products in events like trade fairs, show rooms, business meetings, etc. in order to build up and enhance the Spanish image abroad. MARM The Ministry of the Environment and Rural and Marine Affairs is the department in charge of proposing and executing government policy in terms of the struggle against climatic change and the protection of the environment, its natural resources and biodiversity as well as its marine life, water resources, rural development, agricultural resources, and the cattle, fish and food industries. To this effect, it assumes the responsibilities erstwhile attributed to the Ministry of Agriculture, Fisheries and Food and the Ministry of the Environment as well as the policies developed so far by the Ministry of Public Works with regard to marine protection. The high quality and unique taste of Spanish products have fostered its exports to more than 80 countries, leading in 2008, to an export value of 20 billion and maintaining its positive trade balance worldwide.

4 IPEX IPEX (The Foreign Trade Institute of Castilla La Mancha) is a state-owned company that carries out activities and services aimed at supporting and promoting foreign trade for CASTILLA LA MANCHA S companies. Regarding the wine sector, the viticulture of Castilla La Mancha is fully competitive and first class in terms of grape varieties and growing methods, oenological technology and qualityprice ratio of the wine. On other hand, our region offers a wide range of high quality products including olive oil, Manchego cheese, saffron, honey, fresh and canned foods and vegetables, meats and meat products like ham, etc. EXTREMADURA, A TASTE OF THE UNSPOILT Extremadura, one of the last-remaining unspoilt regions in Spain, is located in South-western Spain and one of its main characteristics is the diversity and quality of its settings, landscapes and natural resources. The diversity of the region makes possible a large range of raw materials and a variety of artisan products offered to all those who would like to discover something different and rarely found. Gastronomy is undoubtedly one of the characteristics which distinguish an area or a region and, in Extremadura, we can show our visitors what has been made in the kitchens of our restaurants, inns, convents, taverns, etc. through the ages. Nowadays, we simply do the same as our ancestors did hundreds of years ago. Our gastronomy has changed very little and we still conserve the know-how and the tradition of previous generations. Extremadura provides visitors with a wide selection of products, showing that the most ancient traditions can be enjoyed today by everyone, 12 Protected Designations of Origin and Protected Geographical Indications, as well as a wide range of artisan products are guarantee of the finest quality. 5 ALIMENTARIA EXHIBITIONS Alimentaria Exhibitions, joint venture between Reed Exhibitions and Fira de Barcelona, organize and manage food product and technology exhibitions. Dehesa de Extremadura controls and monitors the entire production process of the hams and shoulders under this Denomination of Origin, which is the most demanding D.O.P. for Iberico ham in the whole of Spain. The Iberico pig has been part of the landscape of Extremadura since ancient times. The Romans knew about the exceptional qualities of the hams of Hispania and the tradition has been maintained since then, preserving and even enhancing a breed which is an authentic genetic treasure. Extremadura is the best location to raise the Iberico pig. With nearly a million hectares of dehesa, Extremadura offers one of the best preserved ecosystems in Europe. The dehesa is an agro-forest system that permits a balanced and non-abusive farming of natural resources. It is an extensive natural environment combining pastureland for animal food and woodland of mainly Holm-oak and cork-oak trees where livestock, such as the Ibérico pig, the Merino sheep and the Retinto cattle, cohabitate with other wild species. This exceptional environment is the reason that most of the Iberico sow breeding in Spain takes place in Extremadura. Products: Iberico hams Brands: On request 12

Pimentón de la Vera is responsible for the monitoring and control of both the crop and the production process of this Spanish paprika, supplying numbered counter labels to the packaging companies once the batches of ground "pimentón" (Spanish paprika) are classified. Pimentón de la Vera is a D.O.P. artisanal product distinguished by its characteristic aroma and flavour and its colour stability. Its distinct aroma and flavour are obtained through the traditional system of drying over a wood hearth. The colour stability is the result of the high degree of carotene which accumulates in the pepper when it is grown in the microclimate of La Vera and in the careful drying process. The paprika plant arrived from America, and its cultivation expanded in the area of la Vera throughout the 16th century thanks to the Hieronymite monks, of the order of St. Jerome, from the Monastery of Yuste until it began to be produced by families with great farming tradition in this area of the Extremadura region, a fertile land with a large quantity of organic material, crystalline waters and a gentle climate. Pimentón de la Vera comes in three varieties: sweet, sweet-andsour, hot. Products: D.O.P.
